Homemade Summer Sausage Recipes

Summer sausage is the term used for any type of sausage that can keep with out refrigeration. Despite it’s name, summer sausage is usually made during the hunting seasons which take place in the autumn.

Summer sausage is a great for a snack or served on a party tray at a social get together. The price of summer sausage in the stores however has some people looking for alternatives. By making your own summer sausage you can still enjoy the great taste of summer sausage at a fraction of the cost. Summer sausage can be made from most meat products such as pork , beef and even venison. Below is homemade recipes for beef and venison summer sausage.

Beef Summer Sausage Recipe :

This recipe will take 20 minutes of prep time, 2 hr 40 minutes of cook time and will be ready in 1 day 3 hrs. The recipe will yield 5 summer sausage logs.

Ingredients you will need:

5 pounds ground beef

4 tablespoons meat tenderizer

2 teaspoons cayenne pepper

2 teaspoons ground black pepper

3 teaspoons garlic powder

3 teaspoons brown sugar

2 1/2 teaspoons mustard powder

2 teaspoons whole black peppercorns

4 teaspoons liquid smoke flavoring

Mixing Directions:

Step 1: Use a large bowl to combine the ground beef, meat tenderizer, cayenne pepper, ground black pepper, garlic powder, brown sugar, mustard powder and the whole peppercorns. Mix all of these ingredients well. Now finish by pouring the liquid smoke over the mixture but do not mix.

Step 2: Cover the mixture up and refrigerate for 24 hours.

Baking Directions:

Step 1: Preheat oven to 150 degrees.

Step 2: Remove the mixture from the refrigerator and proceed to mix it all up well. Now roll the mixture out into 1 1/2 x 9 inch logs. Place these logs onto a 9×13 inch baking dish.

Step 3: Bake logs for 4 hours. Remove them from the oven and allow to cool before serving.

Venison Summer Sausage Recipe :

This recipe will take 10 minutes of prep time, 1 hour of cook time and will be ready in 1 day 1 hour 10 minutes. This will recipe will yield 2 pounds

Ingredients you will need:

2 pounds ground venison

3/4 cup water

1/2 teaspoon garlic powder

2 tablespoons curing salt

1 tablespoon liquid smoke flavoring

1 tablespoon mustard seed

Mixing Directions:

Step 1: Using a large bowl mix together the ground venison and water and blend well. Then season with garlic powder, curing salt, liquid smoke and mustard seed. Using your hands mix all of the ingredients together.

Step 2: Separate the mixture into two parts and form two rolls. Wrap the two rolls in aluminum foil and refrigerate for 24 hours.

Baking Directions:

Step 1: Preheat the oven to 350 degrees.

Step 2: Remove the aluminum foil and poke holes in the bottom of the rolls. Place them in a roasting pan and place the pan on a roasting rack.

Step 3: Bake for 1 hour. Remove from the oven and allow to cool. Once the rolls are cooled wrap them in plastic wrap and refrigerate until the rolls are cold.

A great way to serve either of these recipes up is on a tray with crackers and cheese. If wanting a condiment with your homemade summer sausage then go with spicy brown mustard. Spicy brown mustard will bring out the flavor of the summer sausage better then any other condiment will.
