I love cranberries, but never knew what to do with them. That was, until I found these recipes.
Cranberry Pecan Rolls
¼ cup chopped pecans
½ cup jellied cranberry sauce
1/3 cup brown sugar
8 brown n’ serve rolls
Preheat oven to 400 degrees Fahrenheit. Sprinkle chopped pecans in muffin cups. Crush cranberry sauce with fork and brown sugar. Put a tablespoon of mixture in each cup. Put rolls upside and press down in cup. Bake for 12-14 minutes. Let cool and serve taking rolls out upside down.
Cranberry Crunchies
1 cup uncooked rolled oats
½ cup flour
1 cup brown sugar
1/3 cup butter
1 lb can cranberry sauce, (jelly)
Preheat oven to 350 degrees Fahrenheit. Mix oats, flour and brown sugar. Crumble butter. Put in mixture. Place half in greased dish/ Cover with cranberry sauce. Top with remaining mixture. Bake 45 minutes.
Cranberry Shortcake Sauce
1, 9 oz cup crushed pineapple
1 cup cranberry sauce
1 cup shredded and diced large red cooking apple
Mix all ingredients and let stand about 45 minutes before pouring over shortcake.
Cranberry Rice Dessert
1 cup cooked rice
1 can whole cranberry sauce, drained
½ cup whipped heavy cream
15 marshmallows cup in tiny pieces
Combine rice and cranberry sauce. Fold in whipped cream and marshmallows. Spoon into cups and serve.
Cranberry Cookies
12 ½ oz all purpose cookie mix
1 ½ cups cranberries, chopped
½ cup pecans
Prepare cookie mix according to mix directions. Stir in cranberries and nuts and bake as directed.
Cranberry Party Mousse
4 quarts fresh cranberries
3 cups water
3 lbs sugar
½ cup orange juice
2 tablespoon lemon juice
2 ½ oz gelatin
2 quarts whipped heavy cream
1 tablespoon vanilla
½ confectioner’s sugar
Combine cranberries, water and sugar. Bring to a boil. Cook about 5 minutes. Mix gelatin with orange and lemon juice. Then add to boiling mixture/ Mix and let cool until slightly thick.
Whip the cream with vanilla and sugar. Fold in cranberry mixture and freeze until firm.
Cranberry Nut Loaf
4 quarts flour
2 quarts sugar
½ couple double acting baking powder
4 teaspoons baking soda
7 teaspoons salt
2 cups shortening
1 ½ quarts orange juice
8 beaten eggs
1 quart chopped walnuts
3 cups cranberries chopped
Mix flour, sugar, baking powder, baking soda and salt. Mix in shortening well. Combine orange juice and beaten eggs. Make a well in center of dry mixture and pour in orange juice mixture. Stir and egg nuts and cranberries. Put in greased dishes and cook at 350 degrees Fahrenheit for 55 minutes.
Cranberry Muffins
¾ cup cranberries, halved
½ cup powdered sugar
2 cups flour
3 tablespoons baking powder
½ teaspoon salt
¼ cup sugar
1 egg, beaten
1 cup milk
4 tablespoons melted shortening
Mix cranberries and powdered sugar.
Sift dry ingredients. Add egg, milk and melted shortening. Mix. Fold in cranberry mixture. Put in muffin cups and cook for 15-20 minutes at 350 degrees Fahrenheit.
