I have to admit I had never even heard of Broccoli Salad before today, but that isn’t surprising, considering I’m not much of a cook.

I tasted a bite of Broccoli Salad at a local home-style food restaurant. It was cool, tangy, and crunchy.

I was fortunate enough to be seated by an elderly lady who offered to share her recipe for Summer Broccoli Salad. After we discussed it, we came to the mutual conclusion that the recipe can be adjusted for those on a low fat diet, making Summer Broccoli Salad the perfect summer side dish for any hot summer day or family event. (The recipe is shared with permission, following our pleasant discussion.)

You’ll notice the amounts of some ingredients vary. This allows you to make the salad to suit your taste.

Ingredients for Summer Broccoli Salad

• A bundle of fresh broccoli

• ½ cup finely chopped red onion

• ½ to 1 cup of chopped English walnuts

• ½ to 1 cup of White raisins

• 1 cup of Hellman’s Mayonnaise

• Tablespoon or two of lemon juice

• ½ cup of sugar

How to make Summer Broccoli Salad

Part of the beauty of this summer salad is your ability to make it just the way you like it. This includes both the texture and ingredients.

The broccoli salad I had at lunch was completely minced. There was no broccoli stem in the salad. It was very finely chopped flowerets. This is an acceptable way to prepare broccoli salad if you want the texture very fine. However, I was advised that it is a little better if you cut the flowerets a little bigger and chunkier. You can also include some of the soft part of the broccoli stalk, especially if you are making a large serving.

Combine all ingredients in a large mixing bowl. Pecans, raisins, and sugar can be adjusted to taste.

Make Summer Broccoli Salad Low-Fat

A few adjustments to your summer broccoli salad will turn it into a delicious low-fat, diet friendly recipe.

Mayonnaise, lemon, and sugar are used in the original recipe to create a sweet, tangy taste. It is a taste that some might describe as sweet and sour. Substitute low-fat sour cream or fat-free sour cream and a sugar substitute for the same sweet, tangy taste without the fat added by mayonnaise.
