Bowl season is upon us. For parents with kids on the gluten and dairy free diet, or for people who need to avoid these types of foods themselves, then Super Bowl parties can be difficult to shop for. However, there are a lot of great snacks that you can buy premade and a lot more that you can make yourself that taste great and that will conform to your special dietary needs.
Shopping for Potato Chips
Plain potato chips are a great gluten and dairy free snack for a Super Bowl party. However, make sure that you read the label to make sure it doesn’t contain wheat flour or any type of glutamate. Your best bet is to select a potato chip in a bag, as the potato chips in a can tend to have wheat products sprinkled on them to prevent them from sticking together.
It is going to be more difficult to find a flavored potato chip that doesn’t contain gluten or dairy. Even BBQ potato chips have wheat and dairy products added. Because of this, you need to read the labels to make sure you select a type that is gluten and dairy free.
Corn tortilla chips are a pretty safe snack food for people on a gluten and dairy free diet. They are great for dipping and great for snacking. Pair this chip with salsa or bean dip. If you are on a low salt diet fry up your own by cutting tortillas into 6 pieces and deep fat frying them for about 3 to 5 minutes, or until they are golden brown. Then drain them on a paper towel.
Another favorite snack food at Super Bowl parties is the infamous Buffalo Chicken Wings. Depending the on the type of buffalo chicken recipe used, you may be able to buy this snack directly from a restaurant. However, make sure they don’t use a breading and that their sauce doesn’t contain butter or other dairy products.
To make your own Buffalo Chicken you will need:
1 pound Chicken Breasts
½ Corn Starch
Louisiana Hot Sauce
Oil for Frying
2 tablespoons Onion Flakes
To start with cut your chicken breasts into strips.
Next create a batter by mixing a ½ cup of corn starch with 2 tablespoons of dried onion flakes and 2 tablespoons of Louisiana Hot Sauce and enough soy milk to create a thick batter.
Soak your chicken strips in the batter for a couple of hours or over night. Make sure the chicken is completely covered by the batter. Add more soy milk and corn starch as needed.
Heat up your frying oil until it shimmers. Then place the coated chicken strips into the oil and fry until golden brown.
Preheat your oven to 350 degrees F and line a cookie sheet with aluminum foil.
Place the fried chicken strips on the cookie sheet and sprinkle them with Louisiana Hot Sauce. (Make sure you buy a type of hot sauce that does not contain butter or milk products. Read the label.)
Bake the coated chicken strips for 10 to 15 minutes or until the sauce has been reduce to a sticky coating on the chicken strips.
Allow to cool slightly before serving.
Gluten and Dairy Free Dips
Ranch dip and nacho cheese dip are dips you will want to avoid. However, salsa and bean dips are still okay. If you want a cheese dip for nachos then you are going to have to keep things hot as soy cheese and vegan cheese set up quickly and get clumpy.
Nachos
To make gluten and dairy free nachos you will need:
Vegan Mozzarella Cheese
Salsa
Corn Tortilla Chips
Ground beef for turkey
Yellow onion
Cumin
Green Onions
Black Beans
Olives
Other Nacho toppings that you like
To start with brown your meat, drain off the fat, cook with yellow onion and a teaspoon of cumin. Set aside.
Cube your vegan cheese and place it in a microwave safe container. Microwave for 90 seconds to 2 minutes, or until melted.
Place chips on a plate, add meat and toppings, then drizzle melted vegan cheese over the chips avoiding areas where the salsa is. (If your salsa is cold and the melted cheese hits it, the cheese will set up and not taste as good.)
