Easy Potato Salad Recipe

Pickled Eggs, Potato Salad

Potato salad is a summer favorite. It’s a great side dish to add to any meal. And since it’s so cheap to make, it’s a great addition to your dinner table, especially if you are feeding a large family or are hosting a party.

Below is one of the easiest ways to make potato salad. It only requires three ingredients and you can vary the flavor to your liking by changing the type of dressing you use.

To make this easy potato salad, you will need the following ingredients:

Potatoes
Hard boiled eggs or
pickled eggs
Creamy salad dressing (your choice of flavor)

How many potatoes or eggs you need is determined by how many people you will be feeding. Plan on one potato per person. Then use one egg for every two or three people. So, if you are feeding eight people, you will need eight potatoes and three or four eggs. As for dressing, you can use as little or as much as you like. If you are making just a small serving, one bottle of dressing is plenty. If you are feeding a party of people, you may need two or three bottles of dressing.

Peel your potatoes, if you want. You can cook them with the peeling then either remove the peeling after they are cooked (so much easier) or you can keep the peelings on and make the potato salad with peelings (yummy and super easy).

Cube or slice your potatoes into the size pieces you like to use in a potato salad. Then cook the potatoes in boiling water and boil just until your pieces can be pierced with a fork, usually about 10 minutes for cubes and maybe even less time for slices, depending on their thickness. Drain and cool.

You also want to hard boil your eggs. If you want a fool proof way to make hard boiled eggs so the shell won’t stick, read this article. If you don’t want to be bothered making hard boiled eggs, you can buy a jar of pickled eggs and just use those. Pickled eggs are fairly inexpensive and no cooking involved! And since they are pickled, they add a bit of zest to the potato salad.

When your potatoes are cool put them in a big bowl. Slice the eggs and toss them in. Then add the creamy salad dressing of your choice. Add just a bit of dressing and stir. Then add a bit more dressing and stir. When the potato salad is the consistency you like, you have added enough dressing. If you are keeping the potato salad in the refrigerator for a day or two, it will absorb the dressing, so have extra dressing on hand to add some to the potato salad just before serving.

If you want, you can sprinkle some coarse ground pepper on your potato salad or some paprika or parsley for color and to add a bit of flavor. Sprinkle on top of the salad just before serving.
