Easy and Delicious Rosh Hashanah Recipes

High Holy Days, Jewish New Year

Rosh Hashanah is the Jewish New Year and the first holiday of the High Holy Days. This holiday is always in the Fall and occurs ten days before Yom Kippur, the day of atonement. The words “Rosh Hashanah” actually mean head of the year. The new year is a celebration because it happens during the month when Jews say God created the world.

Below are two great recipes for your Rosh Hashanah celebration. Thanks so much Grandma (Bubbe)!

Bubbe’s Buttery, Baked Noodle Kugel (this can be made for Rosh Hashanah and/or Passover)

Ingredients

1 Bag of no yolk broad noodles (usually 12 oz) or whole wheat broad noodles
4 lg Granny Smith Apples peeled and cut up into small pieces
1 cup dried Apricots
3/4 cup Apricot Jam
4 eggs
1/2 stick of butter unsalted
1 tsp salt1/2 – 3/4 cup brown sugar


1. Preheat oven to 350. Put the rack in the middle of the oven.
Grease your 9 X 12 baking pan (glass works well).
Cut dried apricots in half and put the apricots in a glass of water for 30 minutes (you can also use orange juice if you have it.)

2. Cook the noodles according to packaging and drain.

3. In a pan on the stove, heat butter and add apples, brown sugar and jam. Flip the apples over until they are very tender. Remove from the pan and put the apples in a large bowl.

4. Add the noodles to the bowl with the apples and add salt and apricots. In a separate bowl, beat the 4 eggs very well and then add them to the apple mixture. Pour the mixture in the 9X12 pan.

5. Put the pan in the oven and bake for 30 -40 minutes.

Grandma’s Heart-warming Honey Cake

Ingredients

3 eggs – large
1 TBS Orange Juice
1 cup organic or real honey (not substitute)
1/4 cup bittersweet hot chocolate or coffee (dissolved and cooled)
3 TBS canola oil
1/2 cup apple sauce
3 1/2 cups white flour – sifted (All purpose)
2 1/2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp salt
1 tsp Allspice
1 cup light or dark brown sugar (whichever you prefer)
1/4 cup slivered almonds
1/4 cup chopped walnuts
1/2 stick unsalted butter.

Preheat oven to 325. Butter 9X13 pan, the bottom and the sides thoroughly and thickly, with unsalted butter.

Mix eggs, OJ, honey, oil, apple sauce and brown sugar together in a bowl using electric mixer.

In a different bowl combine flour, baking powder, baking soda, salt, and Allspice .

Mix hot chocolate or coffee and the flour mixture, alternating between the two, into the bowl with the egg mixture.

Fold in walnuts and almonds. Stir gently until just smooth.

Bake for about 20 – 25 minutes (no cover) . You can also check by putting a small knife into the middle of the cake. If batter sticks to it, leave it in a little longer.
