Almond milk is a milky drink made from ground almonds. Unlike cow milk (or other animal milk), almond milk contains no lactose, making it a good alternative for the lactose intolerant (those who are allergic to milk). It also contains no cholesterol, and is lower in calories than both cow milk and soy milk. Almond milk can be used in place of milk in most recipes.
You can make your own almond milk, or you can purchase almond milk at health food stores. To make your own almond milk, soak one cup of raw almonds in a bowl of water in the refrigerator overnight. The next day, drain the almonds. Blend almonds with three cups water in a blender or food processor until smooth. Then strain through a cheesecloth over a large bowl. Some like to add a little vanilla and/or a little sweetener to their almond milk. Almond milk can be stored in the refrigerator for three to five days.
