6 Biscuits (Grands type or homemade)
1/3 pound processed soft cheese
1/3 cup chicken broth
1 – 2 cups leftover chopped chicken
Butter
In top of double boiler melt cheese. When melted added chicken broth gradually until a thick sauce forms. Add leftover chopped chicken. Split biscuits apart, spread with butter and top with chicken mixture. Serve with green vegetables.

Weekly Meal Plans Cheap Chicken Recipes #2: Chicken in a Shell
6 Baking potatoes
2 Tablespoons Butter
1 Can Cream of Chicken soup
1 cup parmesan cheese
1-2 cups leftover cubed chicken
Bake potatoes, scoop insides out when done. Mash potatoes with butter. Add ½ cup of cheese and mix with remaining items. Scoop potato into the shells and sprinkle ½ cup cheese on top, Bake 375 degrees for 15 minutes.

2 cups elbow noodles, cooked
2 cups leftover chicken, chopped
2 cans cream of mushroom or chicken soup
½ pound cheese cut in small pieces
3 chopped hard boiled eggs
2 cups milk
Mix all ingredients and refrigerate over night or at least 6 hours. Bake for 1 hour in 350 degree oven.

Leftover chicken becomes a filling meal when you turn it into Chicken A la King and even more so when you serve it in a toast cup.

Cheap Chicken A La King
Saute a cup of sliced mushrooms in 4 tablespoons of butter. Add 4 tablespoons of flour, ½ teaspoon of salt and pepper, gradually add 2 cups of milk and cook over medium heat until the mixture thickens. Add 2 ½ cups leftover chopped chicken and a cup of green peas. Heat thoroughly. Serve in toast cups.

Toast Cups
Cut crust from bread, Press into a muffin tin so you have the four corners of the bread sticking out. Bake at 400 degrees for 10 minutes. Watch for the bread to turn brown. Allow to cool in pan a few minutes so the toasts cups will hold shape when removed. Use the toast cups to hold Cheap Chicken A La King.
