Recipes for Living with Ulcerative Colitis

Planning and preparing nutritious (and tasty) meals to cater to your needs when you suffer from ulcerative colitis can seem like an insurmountable challenge. Of course, there are myriads of options available, especially since you will be determining what goes inside your mouth. If you have children or a spouse for whom to cook, then the challenge may seem to aggrandize. These recipes are not only easy to follow, but are healthy and are great choices for those with compromised digestive systems.

Turkey Patties

This is a great recipe for the whole family. Everyone will want to have a bite. Also, the turkey has less fat and is easier on the stomach than ground beef.

Ingredients
1 lb. lean ground turkey
1 tbs. coconut oil
1 tbs. dried onion flakes
1 tsp. dried garlic
1 tsp. oregano
1 tbs. freshly chopped parsley
1/2 tsp. sea salt
1 medium sized onion
several cloves fresh garlic

Place the ground turkey in a mixing bowl and mix in the coconut oil, onion flakes, powdered garlic, oregano, and sea salt. Mix the ingredients thoroughly and divide into six or seven balls around the same size. Flatten the balls slightly and place on a tray. Then refrigerate until ready for use. Peel the onion and slice into 1/4 inch round sections. Place the onions slices on a plate and brush both sides with the remaining coconut oil. Place the onion slices on a pan and sauté. Place the turkey burgers on the pan and cook for approximately 4 minutes per side or until they are cooked all the way through.

Delicious Healing Broth

This broth is not only easy to digest, but also contains collagen and gelatin (from the bones), as well easily absorbable vitamins and nutrients. Soups practically soak up all the good things you’d want from the vegetables. This is a good choice on days when nothing seems to go well with your stomach.

Ingredients

1 pack beef bones or whole chicken legs with bones included (approx. 4 or 5 cut up pieces)
Any vegetables/herbs you like such as garlic, onions, oregano, carrots, celery, potatoes, sage, basil
1/4 cup vinegar (preferably apple cider vinegar)
10 cups water
sea salt
1 tbs coconut oil

Sauté bones or chicken in some coconut oil. Chop up vegetables and add to bones and cook briefly. Douse the bones with vinegar. This softens the marrow and lets the nutrients to be better absorbed. Add water and sea salt. Simmer on medium for about thirty to forty-five minutes, then on low for three hours or longer. Stir occasionally; make sure that the marrow is leaving bones.

Ginger and Carrot Soup

This is a tasty, warming soup. The ginger helps with digestion, and carrots, of course, are loaded with beta carotene. The garlic and onions provide sulfur.

Ingredients

1/2 butternut squash (squared)
1 pound carrots, peeled and chopped
As many garlic cloves as you like
1 onion, chopped
One segment ginger, peeled and thinly sliced
2 cups water
sea salt and pepper

A few drops coconut oil
pinch of cinnamon (optional)

In a large pot, sauté the garlic and chopped onion in some coconut oil, then add 2 cups water and butternut squash. Then add carrots and fresh ginger. Add the sea salt and pepper, and cinnamon (only if you want to). Allow to cook for at least twenty minutes. Blend the entire mixture in a food processor or blender until the consistency is smooth. Adding some more coconut oil to the mixture will give it a nice flavor. Coconut oil is not only a very good oil to cook with, but to eat as well. It is healing for those with bowel diseases.

Alternative Banana Bread

This requires a surprisingly low number of ingredients. It’s also delightfully easy to make.

Ingredients

3 cups almond flour
1/2 cup honey, agave nectar or raw sugar; or even Stevia if you have it
3 eggs
2 mashed bananas
1/4 teaspoon sea salt

1/2 teaspoon baking soda
1/2 cup raisins

A pinch of cinnamon, cloves, nutmeg or whatever spices you enjoy

Mix all of the listed ingredients together. After, lining the pan with wax paper, fill it in with the mixture. Bake for an hour at 350 degrees F (180 C).
