Quick & Easy Weight Watcher Desserts for Your 4th of July Party

The 4th of July is a time for celebrations, time spent with friends and family and always good food. There will be no shortage of cookouts, BBQs and just a lot of wonderful, savory good things to eat. Will you be hosting a 4th of July party, or just attending one as a guest? Either way, you will probably be in search of something quick and easy to fix for that get together. How about something low in calories also? That’s where these quick and easy Weight Watcher desserts will come in handy for your 4th of July party. All five of these recipes are great tasting, low in Weight Watchers points and downright perfect for any celebration throughout the year.

Cool ‘n Easy Pie

Ingredients:

2/3 cup boiling water

1 package (4oz) Jello brand Sugar Free Gelatin, any flavor you like

1/2 cup cold water

ice cubes

1 8oz tub of Cool Whip Lite Whipped Topping, thawed

1 graham cracker crumb crust (9 in.)

Directions:

Stir boiling water into gelatin mix, in a large bowl. Stir for at least two minutes, until completely dissolved. Mix in the cold water and ice cubes to make 1 cup. Add the water and ice to the gelatin mixture and stir until the ice is melted. Next stir in the whipped topping with a wire whisk, until smooth. Refrigerate the cool whip and gelatin mixture for 15 to 20 minutes, or until the mixture is thick and will mound. Spoon the mixture into the graham cracker crumb crust and refrigerate for 4 hours, or overnight.

Makes 8 servings at 2 Weight Watchers points per serving.

Frozen Peanut Butter Cups

Ingredients:

1 8oz tub of Cool Whip Lite Whied Topping

1/3 cup Reduced Fat Peanut Butter

Hershey’s Lite Chocolate Syrup

Directions:

Whisk 1 cup of the cool whip with the peanut butter and mix thoroughly. Fold in the remaining cool whip. Line a muffin tin with 12 paper liners. Spoon about 1 1/2 tablespoon of the mixture into wach of the 12 muffin liners. Top each with 1 teaspoon of the chocolate syrup. Freeze!

Makes 12 servings at 2 Weight Watchers points per serving.

Summery Tropical Trifle

Ingredients:

1/2 cup canned tropical fruit mix, drained well

1/2 container of Weight Watchers Key Lime yogurt

1 tablespoons Cool Whip Fat Free Topping

1 crushed graham cracker

Directions:

Using individual parfait glasses, or any small glass, layer the fruit, yogurt and Cool Whip. Repeat layers, ending with the cruches graham cracker on top.

Makes 1 serving at 3 Weight Watchers points per serving.

Strawberry Fluff Pie

Ingredients:

4 cups strawberries, sliced

1 small package of Sugar Free Strawberry Jello

2 cups cold water

1 small package of Sugar Free Vanilla Pudding, not the instant kind

1 prepared graham cracker crumb crust, 8 inches

Directions:

In a large saucepan, add 2 cups of cold water and the gelatin and pudding mixes. Bring to a boil, stirring frequently until thickened. Line the bottom of the graham cracker crumb crust with the sliced strawberries. Pour the pudding/gelatin mixture over the strawberries and refrigerate until firm.

Makes 8 servings at 2 Weight Watchers points per servings.

Toasted Coconut Cream Cheese Dessert

Ingredients:

10 graham crackers

1 8oz package of Fat Free Cream Cheese, softened

2 cups skim milk

1 small box of Fat Free Sugar Free Vanilla pudding

1 8oz tub of Fat Free Cool Whip topping, divided

1/4 – 1/2 cup coconut, toasted

Directions:

Use a square baking dish and lay the graham crackers in the bottom of the dish. You may need to overlap a few of the crackers, depending upon what size baking dish you use. Whip the milk, pudding and cream cheese together. Fold in 1/2 tup of the Cool Whip and refrigerate mixture. Once the mixture is firm, spoon over the graham crackers and top with the remaining 1/2 tub of Cool Whip. Sprinkle toasted coconut over the top.

Makes 8 servings at 3 Weight Watchers points per serving.

Each of these dessert recipes are great for a hot 4th of July day. They are quick, easy, tasty and much lower in points than many of the traditional 4th of July party desserts you will find readily available.
