Low Carb Cauliflower Recipes

Many people will make a weight loss New Years Resolution this year. One of the more common diets chosen for weight loss is a Low Carb Diet. Perhaps your New Years resolution is to try the Atkins Diet or South Beach Diet. Maybe you will choose your own methods of eating low carb. However you choose to lose weight in 2009, chances are you will increase your vegetable intake. Cauliflower can be used in low carb diets in a variety of ways. Many potato recipes can use cauliflower instead for a lower carb dish. Some restaurants now offer mashed cauliflower as a low card side dish. If your New Years Resolution is to lose weight by eating low carb, consider adding these cauliflower recipes to your list of possible meal items.

Low Carb Cauliflower Recipe #1: Twice Baked Low Carb Cauliflower

2 Heads Cauliflower

1/2 Stick Butter

8 oz Cream Cheese

8 oz Shredded Cheddar Cheese

3 Strips Bacon

Garlic Salt, salt and pepper to taste

Break up and boil Cauliflower until very tender. Drain Well. Combine Cauliflower, butter, cream cheese, garlic salt, salt, and pepper. Mix with electric mixer until smooth Add browned bacon pieces and half of the cheese. . Whip with mixer on high. Place in a 9X13 dish and cover with remaining cheese. Bake in preheated oven at 350 degrees for about 30 minutes.. This low carb cauliflower recipe only has 4-5 Grams of carbs per cup!

Low Carb Cauliflower Recipe #2: Low Carb Cauliflower Bake

16 ounce bag frozen cauliflower, cooked and drained

1/2 cup onion, diced

1 ½ cup fresh mushrooms, chopped coarsely

2 tablespoons butter

1/4 cup heavy cream

1/4 cup mayonnaise

4 ounces cheddar cheese, shredded

Salt and pepper, to taste

1 ounce green onions, chopped, about 1/4 cup, optional

Roughly chop the cauliflower if pieces are large; place in a greased 2-quart casserole. Season with salt and pepper. Sauté the onions and mushrooms in the butter until tender and mushroom liquid has evaporated, seasoning to taste with salt and pepper. Add to cauliflower then mix in the cheese. In small bowl, whisk together the cream and mayonnaise. Pour over cauliflower mixture and mix until well coated with sauce. Adjust seasoning, if necessary. Sprinkle green onions over the top, if using. Bake, covered, at 350º for 25 minutes. Uncover and bake about 10 more minutes until bubbly and browned. Makes 6-8 servings

Low Carb Cauliflower Recipe #3: Low Carb Cauliflower, Bacon Chicken Casserole

1 16 oz pkg frozen Cauliflower thawed

1 12 Oz package bacon

4 Green onions chopped with tops

1 13 Oz can chicken

1 ½ Cups heavy cream

¾ Cup grated Parmesan cheese

3 Tbls butter

½ Tsp garlic salt

Dice cauliflower into small pieces and set aside. Cut bacon crossways in ½ inch pieces sauté until almost crisp. Add onion and continue simmering a few minutes. Add chicken. Heat through. Place in bowl with slotted spoon reserving a tablespoon of bacon drippings in skillet. Add cream to bacon drippings and simmer slowly a few minutes. Cream will thicken slightly. Do not allow to boil. Add parmesan cheese and garlic salt and stir until well blended. Add chicken and bacon mixture and butter. Stir until well blended. Add cauliflower, tossing until well coated with sauce. Turn off heat and cover for five minutes or so to blend flavors.

Serves six at about 5 carbs per serving.

Low Carb Cauliflower Recipe #4: Low Carb Cauliflower casserole

1 Cauliflower head, chopped, or one bag frozen cauliflower

1lb cottage cheese

8oz shredded cheddar

8oz sour cream

4 lg eggs

butter

Cook cauliflower until tender but not mushy. Mix with other ingredients, place in baking dish. Bake at 350 degrees for 35 min

Low Carb Cauliflower Recipe #5: Low Carb Cauliflower and Cheese Soup

1 Pkg. Frozen Cauliflower

1 Can Chicken Broth

1/2 Cup Heavy Whipping Cream

3 TBS. Butter

1 Cup Shredded Cheddar Cheese

Salt & Pepper to taste

Cook and drain the cauliflower

Mix cauliflower, whipping cream and butter in blender. Blend until butter is melted and cauliflower is smooth. Add chicken broth, salt and pepper a little at a time while blending. Pour into bowls and top with cheese. This low carb cauliflower recipe is a great winter food.
