Lobster Pasta with Creamy Herb Sauce

Lobster tail meat is the most succulent portion of the lobster. It has a taste and texture that separates it from all other shellfish. The most common methods of cooking lobster is steaming or boiling. This expensive and delicious food is high in sodium but very low in fat. With the addition of a cream sauce engulfed in a variety of spices gives the lobster yet another fragrant and unique flavor.

Ingredients:

“Sauce”

• 2 tablespoons of extra virgin olive oil

• 1 cup of heavy cream

• ¼ cup of chicken broth

• 3 large cloves of garlic mined very fine

• 3 large plum tomatoes, chopped

• ½ teaspoon of kosher salt

• 1 tablespoon of minced fresh basil

• ¼ teaspoon of red pepper

• 2 teaspoons of minced fresh tarragon

• ¼ teaspoon of onion powder

• 2 tablespoons of freshly minced Italian parsley

“Lobster”

• 1 pound of lobster tail meat

• 1 teaspoon of kosher salt

“Pasta”

• 1 pound of fettuccine noodles

• ½ teaspoon of kosher salt

Directions:

“Lobster”

1. Add salt to a large pot of water and set to boil.

2. Once water boils place the lobster tails in the hot water and cover the pot.

3. Reduce the heat to simmer and cook the tails for 15 minutes.

4. Take the lobster tails from water and rinse in cold water.

5. Remove the meat from the lobster shells. (It is easier if the lobster tail shell is split in half first.)

6. Then cut the lobster meat into chunks and set aside.

“Sauce”

1. Heat the oil in a large frying pan over a medium heat.

2. Add in the garlic and sauté it until it starts to brown.

3. Next, add the tomatoes, cream, chicken broth and all the spices.

4. Turn the heat down to simmer and cook for 20 minutes.

5. Puree the sauce quickly with a hand mixer to get all the lumps out.

6. Place the chunks of lobster tail meat in the sauce and let it cook for 5-6 minutes to warm it up.

“Pasta”

1. Salt water and bring to a boil.

2. Cook pasta according to package so when done it will be al dente.

3. Stain water from pasta with a colander and transfer to a large pasta platter.

“Putting it all together”

1. The pasta is now in the pasta platter.

2. Add the herb lobster sauce over the pasta and toss it so the pasta is lightly coated.

3. Garnish if you like with a sprig or some chopped leaves of fresh parsley.

4. Place platter on table and serve immediately.

5. Enjoy!

Suggestions:

• Linguini, spaghetti or angel hair pasta can also be served with this sauce.

• Steamed broccoli or sauté mushrooms can also be added to bulk up the dish as well as add more flavor, texture and color to the platter.

• Serve sliced French or Italian bread to soak up the sauce left on the plate. (This is a must if asking any pasta lover.)

• A small salad is the perfect side dish to complete this meal.

• Many enjoy grated cheese over pasta. With this dish you can still enjoy that flavor. Grate the cheese or sprinkle it once served in individual plates. (Not everyone feels the same way about grated cheeses.)
