Chicken Breasts, Chicken Broth, Swiss Cheese

I love smothered chicken. It was the first dish I made for my husband when we started dating, somewhat because it’s tasty but more so because I didn’t know how to cook anything else. To this day, it’s still his favorite dish.

Over the years, I’ve followed a variety of smothered chicken recipes (and there are many varieties, whether with soup mix or marsala wine). The recipe I am sharing below is the culmination of all of the best ingredients that work the best together. The added bonus? This is one of the easiest, tastiest, and healthiest ways to prepare a smothered chicken dish. The biggest health-saver in this is the omission of loads of butter or gravy. And trust me, it’s tasty enough this way.

You can make it even less fatty by omitting the cheese, but it’s a pretty healthy recipe because you’re using skinless chicken breasts and vegetables. Use reduced sodium chicken broth if you are concerned about salt intake.

NOTE: The recipe does not contain “amounts” of any ingredients. This is such a simple recipe that you can decide for your own tastes how much of each ingredient you’ll need.

Ingredients

Skinless, boneless chicken breasts

Chicken broth

Olive oil

Sliced fresh white onion

Bell peppers (any/all colors)

Fresh mushrooms (white, shitake, or portabella are all tasty)

Swiss cheese slices

Sea salt or kosher salt

Black pepper

Baking dish

Instructions

1. Preheat the oven to 350 degrees.

2. Pour the salt and pepper on the chicken breasts.

3. Place seasoned chicken breasts into the baking dish.

4. Pour desired amount of chicken broth on and around the chicken breasts.

5. Bake chicken breasts until heated and white in the middle, around 30-40 minutes. Ten minutes before the chicken is completely cooked through, place a slice of Swiss cheese on each chicken breast and continue to bake.

6. While the chicken is baking (toward the end of the cook-time), heat a small amount of olive oil in a frying pan on medium high heat.

7. Place the fresh veggies in the frying pan and cook until soft and sautéed.

8. Once the chicken and veggies are fully cooked, transfer the chicken to individual plates and “smother” with the mixed vegetables.
