Baked Chicken, Ground Flaxseed, How to Bake

Flaxseed has an enjoyable nutty taste and adds substance if your diet is low in fiber. Whole or ground flaxseed can be mixed with juice, sprinkled on a salad, yogurt or soup. I sprinkle it on peanut butter sandwiches and cereal too. I modify most any recipe to include ground or whole flaxseed, including many baked recipes. You can bake with flaxseed substituting one tablespoon of flax and three tablespoons water to replace one egg. Use flaxseed to replace fat in a recipe. Three tablespoons of flaxseed can substitute one tablespoon of oil.

Tammy’s Flaxseed Crispy Baked Chicken
6 Servings
10 by 10 baking pan

6 chicken pieces
3/4 cup ground flaxseed
3/4 cup crushed corn flakes
2 tsp. salt
1 tsp. pepper
2 tsp. garlic powder
1 tsp. cayenne
1 tsp. chili powder
Butter flavored cooking spray

Preheat oven to 350.Cover the baking pan with foil.
Mix together ground flaxseed, corn flakes, salt, pepper, garlic powder, cayenne and chili powder in a medium bowl. Add 6 tablespoons of this mixture to a second medium sized bowl.
Wash one chicken piece at a time. Shake the water off and let it drip for five seconds. Place the chicken in the second bowl. Use a medium size spoon to sprinkle more mixture and coat the piece of chicken. Use the spoon to place the piece of chicken in the baking pan. Repeat the steps with the other five pieces of chicken. Spray the tops of the coated chicken with butter flavored cooking spray.
Bake uncovered for forty five minutes or until done. The fats will render out of the chicken, the skin will crisp but the meat will be tender and juicy.

I compliment the main course with steamed zucchini and red potatoes, or green beans and potatoes baked with flaxseed. Follow-up your meal with homemade desert baked with flaxseed. Banana Flax Cake

1/2 cup butter, melted
1 1/2 cups sugar
3 eggs
1 tablespoon vanilla
3 bananas, mashed
2 cups flour
1 cup milk
3 1/2 teaspoons baking powder
1 teaspoon salt
8 tablespoons ground flaxseed

Preheat oven to 350 degrees. Butter and flour a 13 x 9 inch cake pan.
Cream together butter, sugar, and then add the eggs, vanilla, bananas. Mix in flour alternately with the milk. Blend in baking powder, salt and the ground flaxseed. Bake 40-45 minutes.
Put holes in the top of the cake with a fork. Pour a can of sweetened condensed milk over the cake while it’s hot. Let it cool and serve.
