Healthy Substitutions, Pie Crust Recipe

Looking for a simple yet manly recipe to make for a Father’s Day brunch? Try a bacon, mushroom swiss quiche and you’re sure to please the special fathers in your life! A sausage, bacon, and ham omelet is another excellent choice for the meat loving father in your life. Additionally, a delicious monte cristo might be just the thing to make any hard working dad you know feel appreciated on this Father’s Day. Whichever recipe you choose, be sure to serve it with an extra side of love!

Bacon, Mushroom, Swiss Quiche

Ingredients – Serves 2 hungry dads!

5 eggs
½ cup milk
1 ½ cups shredded Swiss cheese
1 small can (6 oz) mushroom pieces (drained)
4 slices of bacon
1 ready made pie crust

Recipe

1. Preheat oven to 350 degrees. Cook bacon according to package. Let cool.

2. While bacon is cooling place pie crust in a glass pie plate.

3. Combine eggs and milk. Whisk until blended.

4. Add bacon, cheese, and mushrooms. Mix.

5. Pour egg mixture into the crust.

6. Bake for 30 – 40 minutes.

7. Let cool for 5 minutes. Slice and serve with fresh fruit of your choice.

Healthy Substitutions

1. Watching carbs? Go crustless! Remember to heavily spray a glass pie plate with cooking spray before pouring in the egg mixture.

2. Use egg beaters instead of eggs, 1% or skim milk instead of whole, 2% or reduced fat cheese, and turkey bacon to lower the calorie content!

Sausage, Bacon, Ham Omelet

Ingredients – makes 2 omelets

4 slices bacon
4 sausage links
2 thick slices diced deli ham
6 eggs
¼ cup milk
1 cup shredded cheddar cheese
Cooking spray

Recipe

1. Cook bacon according to package. Let cool.

2. Cook sausage links according to package. Let cool.

3. Dice 2 thick slices of deli ham.

4. Crumble cooled bacon. Dice cooled sausage links.

5. Turn frying pan on medium to low heat to warm.

6. Combine eggs and milk. Whisk together.

7. Turn frying pan to medium-high heat. Spray with cooking spray.

8. Place all meats into frying pan. Cook for 3 minutes stirring occasionally.

9. Add egg mixture to frying pan. Run a rubber scraper around the edge of the pan to bring the eggs to the middle of the pan until eggs begin to solidify around the edges.

10. Jiggle the pan a bit to ensure that the omelet doesn’t stick to the frying pan.

11. Once egg is almost fully cook, use the rubber scraper to flip.

12. Turn heat off and remove pan from stove. Add cheese to center of the omelet and fold in half.

13. Serve with chives, scallions, or topping of your choice!

Healthy Substitutions

1. Use egg beaters instead of eggs, 1% or skim milk instead of whole, 2% or reduced fat cheese, and turkey bacon and sausage for a healthier option!

Monte Cristo

Ingredients – makes 2 sandwiches

4 pieces French toast (pre-made)
6 slices deli ham
6 slices deli turkey
2 slices Swiss cheese
cooking spray

Recipe

1. Pre-heat oven to 350 degrees.

2. Assemble sandwiches – 2 slices French toast, 1 slice Swiss cheese, 3 slices deli ham, 3 slices deli turkey.

3. Place on a sheet tray coated with cooking spray.

4. Place in oven for 15 minutes or until cheese is melted and deli meat is warm.

5. Optional: Serve with mayonnaise and fresh fruit of your choice
