I am always looking for the easiest recipes that I can find especially during the holidays. Sometimes I am too busy to do all the cooking that my grandma use to do. It’s so much easier these days to find what I need at the supermarket instead of spending all day at the stove. Many years ago when I was a teenager it was decided by someone in my family (grandma I think) that I would be the one to contribute the deviled eggs. I had no idea how to fix deviled eggs. Someone eventually told me that I could put mayonnaise, mustard, and pickles and sprinkle the red pepper on top of them. I did this for a few years because I kept being asked to bring them for some reason. I think it was because no one else wanted to fix them, and we had the chickens. We didn’t go to the store back then to buy eggs. Daddy raised the chickens for our table and my sister went to hen house to gather the eggs. One day as years went by I ran out of mayonnaise and all I had was some sandwich spread. When I got to reading the ingredients I decided that I would use it instead and have been since that day. Be sure to make plenty because they won’t last long. My family loves them and it has been a tradition for me all these years to take deviled eggs for family dinners and parties. My daughter in the past few years has also been delegated to make deviled eggs for her husband’s family dinners and parties.

Deviled Eggs

Boil your eggs on slow boil for 7 minutes. Allow eggs to sit until water is lukewarm. Rinse in cool water and peel immediately before eggs get cold. This will prevent your eggs from cracking and the shells will peel off evenly. I always boil a couple of extra eggs in case of mishap. You can smash the eggs that are extra very finely to add to your egg yolks to have enough filling for nicely filled egg whites.

Slice eggs in half lengthwise. Always clean your knife after each slice to have clean sliced egg white halves. Place them in a sectioned deviled egg dish to prevent them from sliding and they will be nicely displayed. Spoon out yolks into bowl and smash them finely with fork before mixing in the sandwich spread.

Combine egg yolk mixture with sandwich spread which can be found in the same area that you find mayonnaise in the supermarket. Most spreads have relishes or pickles without needing to add anything else to your mixture. Mix to consistency to form a soft mass. Then spoon mixture into egg whites being careful not to get sides messy. Sprinkle paprika lightly over tops and garnish your deviled egg dishes with sprigs of parsley. These make nice appetizers for your holiday party or Christmas dinner.
