Best 5 Corned Beef Appetizers for Special Events

Are you looking for several corned beef appetizers to serve at your next special event? As a former party planner, I’d love to help you out with that task by providing a few suggestions. Here they are:

Mini Reuben Sandwiches

In my experience, miniature reuben sandwiches make excellent party appetizers. There are several different ways to make them. Some folks serve the corned beef, Swiss cheese and sauerkraut onto rye toast, tucked into tortillas or folded into pastry dough. Personally, I like serving them onto rye dinner rolls. You can find a rye dinner roll recipe posted on the Food Network’s website and an appetizer recipe posted on the Betty Crocker website.

Reuben Fritters with Dipping Sauces

Prefer your reubens on the crunchy side? Try whipping up a batch of corned beef fritters. They are traditionally made with pureed corned beef (24 ounces), shredded cheese (24 ounces), sauerkraut (16 ounces) and cream cheese (16 ounces). However, sometimes I like to throw diced dill pickles (8 ounces) into the mix. Just mix the ingredients together and form it into balls. The amount of fritters will vary based on how big you make the balls. When you’re done, dredge them in panko and then deep fry them like you would any other fritter. Then serve the fritters alongside a series of dipping sauces. Three of the best dipping sauces to serve are Thousand Island Dressing, horseradish and spicy brown mustard.

Corned Beef Cheese Balls and Triscuits

Would you rather serve your guests a “no muss, no fuss” appetizer? If so, I’d suggest making a corned beef cheese ball and serving it alongside a platter full of Triscuits. Of course you could also include assorted soda crackers. In order to make the balls, just follow the fritter filling recipe mentioned previously. Then form the mixture into one large ball and roll it into fresh parsley. Afterward, place it onto a small plate that has been covered with lettuce and serve it with the crackers.

Cabbage Rolls

If you ask me, corned beef and cabbage rolls make wonderful appetizers as well. I have served them on many occasions. If you have never made them before, there is a great recipe posted on the Whole Foods Market website that you may want to consider utilizing. My recipe is similar, only I tend to substitute the regular salt with garlic salt.

Kabobs with Dipping Sauces

Finally, you may want to think about serving grilled corned beef kabobs with dipping sauces. I typically like to make my kabobs with potatoes, mushrooms and red onions. However, you could opt to make yours with other items like peppers, brussel sprouts, squash, white onions and carrots. The choice is yours.
