These days with food cost going up due to the gas crisis, there are many easy and time efficient ways to continue to make sure that your children get decent and nutritional meals that their growing body needs. Here are some recipe ideas for quick snacks and light meals that will fill you and your children up while saving you precious time for those long hours of commute, and of course money. Eat well, to your health!

Quesadillas: Quesadillas can be made in different ways depending on what you want wrapped inside your tortilla. I chop grilled chicken or leftover steaks and wrap it inside the tortilla along with melted cheese, cilantro, and other fresh vegetables as I or my children like. You can also just simply enjoy the tortilla with only cheese. Tastes great too.

Homemade Tacos: My children love tacos, but I don’t enjoy buying them at the drive through windows all the time. Once a week, I buy fresh ground turkey or chicken and season it well. I cook it thoroughly and wrap it in tortilla along with fresh lettuce, cilantro, chopped onions, tomatoes, and whatever I want in it. It is a delicious and healthy way to eat variety of food that is good for your body.

Burritos or Chimichanga: The Mexican style burritos mostly have beans in them which are great because beans are great source of iron and fiber. My children love the store-bought burritos, but I worry that I don’t know how long they have been in the freezer or what preservatives were put in them. Once in a while, I try to make my own by making Spanish-style rice with black eye beans. Wrap them in a whole wheat tortilla and you have yourself a heart healthy and delicious food any time of the day. You can also add ground meat in this wrap for even more nutritious meal.

Fruits and Granola Wraps: Another great way to enjoy tortilla is to wrap your favorite fruits in it. Peanut butter and bananas are great friends. Spread ample amount of peanut butter on your tortilla and sprinkle with granola cereal. Cut banana vertically to make it long enough from one end of the tortilla to the next. Insert into the tortilla and wrap up for a great sandwich. You can also cut them up in inches for finger food or snack.

These are just a few of the many great meals and snacks you can create using the very cheap but healthy tortilla. More recipe ideas are available for enchiladas, and whole lot of rolls. Eat healthy by diversifying your food while saving money too. Tortillas are very cheap and the many meals you prepare with them are also on the low end of spending.

A note on tortillas: I have found that using flower-based tortillas hold better than the corn based ones. Also, the larger size ones are great because you can add all the ingredients you want in them and they still wrap up pretty well. The corn tortillas are good too, and taste great, but they tend to fall apart quicker with ingredients packed in them so they end up falling out into your plate.
