5 Crock Pot Squirrel Dinner Ideas for Summer

Are you looking for a few squirrel dinner ideas to add to your repertoire this summer? You may want to give these five dishes a try:

1. Squirrel Cacciatore

In order to make this dish, you’ll need some wild mushrooms, capers, celery, dry white wine and tomato sauce. If you can’t find capers at your local grocery store, you can generally buy them online for less than $4 a bottle. Place all of those ingredients into a crock pot and then turn your attention towards the squirrel meat. You’ll want to season it as desired and then dredge it in flour. Next, sauté the meat along with some diced garlic and onions until the meat has a nice sear onto it. Then place those ingredients into the crock pot and let it simmer.

2. Squirrel Stew

For this recipe, you’ll need dry onion soup mix, cubed potatoes, baby carrots and boiling water to start the stock for your soup. Put all the ingredients into the crock pot and then pull out a skillet. Dredge the squirrel meat into flour and then sauté it in butter with scallions, garlic, and bacon. Once the onions turn translucent and the meat browns, remove the pan from the flame and add the ingredients into the crock pot. Continue by deglazing the pan with red wine and butter. Place the deglazing mixture into the crock pot as well and let it all simmer until the meat is tender.

3. Squirrel and Beans

This dish is prepared similar to a stew, only you’ll want to serve it over wild rice. Start by marinating the squirrel meat in some Mojo Chipotle. In case you are not familiar with it, Mojo Chipotle is a Latin marinade with heat. If you have sensitive taste buds, you may want to use the Mojo Criollo. The Mojo Crillo is citrus based. You’ll need some pinto beans that have been drained and rinsed, chopped bell peppers, beef broth and stewed tomatoes for your stock. Place all those a fore mentioned ingredients into the crock pot. Proceed by removing the squirrel meat from the marinade and dredging it in flour. Sauté the meat along with some onions and then deglaze the pan. Pour the deglazing mixture into the crock pot and let it cook.

4. Curried Squirrel

For this crock pot dish you’ll need to make a dredging mixture out of flour, Creole seasoning and garlic powder. Dredge the squirrel meat and then sauté it in a pan with some bacon and small, whole, white onions. After the meat turns brown, add it to the crock pot and deglaze the pan with beef broth. Pour the deglazing mixture into the crock pot and add diced tomatoes and curry powder. Let it simmer on low for several hours. Once it is done, serve the mixture on a bed of white rice.

5. Squirrel Mole Poblano

You will want to sauté the squirrel meat and deglaze the pan with cooking sherry. Put the mixture into a crock pot along with some beef broth, chunks of potatoes, diced tomatoes and mole poblano sauce. Mole poblano is made from a mixture of almonds, dried chilies, raisins, onions, chocolate and spices. You can typically find it online or through select grocery stores. Let it simmer until the meat is fork tender and then serve.
