Recipe: Double Chocolate S’mores Cakes

With the smooth chocolate, the gooey marshmallow, and the crisp crunch of the graham crackers, s’mores have been delighting people for years. This modern twist on the classic treat is a simple and quick recipe that combines the whimsy of a whoopie pie with the nostalgic taste of s’mores. Here’s what you need:

  • 1 box chocolate cake mix
  • 8 tablespoons (1 stick) butter, melted
  • 1 egg
  • 2/3 cup chocolate chips
  • 8-10 large marshmallows
  • 10-12 graham crackers, finely crushed

Here’s what you do:

  1. Preheat your oven to 350 degrees.
  2. In a large bowl, use an electric mixer to beat together the cake mix, butter, and egg until a moist thick dough forms (about 1 minute). Stir in the chocolate chips.
  3. Shape the dough into 1-inch balls. I discovered that it’s easiest to do this with your hands, but you could also use rounded tablespoonfuls of dough as well. Place the balls onto an ungreased cookie sheet, about 2 inches apart.
  4. Bake for 13-15 minutes. (Baking times could vary based on individual ovens, but my cookies came out perfectly at 15 minutes). The cakes should still be just a little bit soft when you take them out. Important: Do NOT turn off the oven. Transfer the cakes to wire racks to cool for about 5 minutes.
  5. Return half of the cakes to the cookie sheet, with the rounded side down. Place one large marshmallow on each cookie – the flat end of the marshmallow should touch the flat side of the cookie so that the marshmallow doesn’t roll off when you move the cookie sheet. Keep the other half of the cakes on the cooling racks for now.
  6. Sprinkle the marshmallows with half of the crushed graham crackers.
  7. Place the marshmallow-covered cookies back into the warm oven for another 2-3 minutes until the marshmallows are just beginning to melt.
  8. Immediately press the other cakes (the ones that you set aside on the cooling racks) onto the melted marshmallows to form little cookie sandwiches. While still warm, garnish the cookies with the remaining crushed graham crackers. Allow to cool completely before eating.
