Pineapple. Use a pineapple that isn’t cored.

Piece of rectangular styrofoam. This will be used for the chocolate covered strawberries while cooling in the refrigerator.

Rinse all the fruits and kale. This will remove any dirt from the fruits being used.

NOTE: You can peel the cantaloupe and honeydew once you have cleaned the seeds from them. They can be peeled before slicing them or after. The choice is up to you.

Slice the cantaloupe and honeydew in half and scoop out all the seeds. If using slices of the cantaloupe and honeydew, slice them the thickness you would normally slice them. You can cut some of the melon slices into one inch chunks to create kabobs of fruit.

Cut the top and bottom off the pineapple. Peel the skin off the pineapple. Slice it in one inch slices. Peel and slice the kiwi into half inch slices. Remove the grapes from the stems. Slice the starfruit into half inch slices leaving the skin on. Leave the stems and leaves on the strawberries. Do not cut the strawberries.

NOTE: Don’t let the point of the skewers show through the last piece of fruit added. Make four to six of each of the following items minimum.

Start with the chocolate covered strawberries. For chocolate covered strawberries, melt the chocolate per the instructions on the package. Place the leaf side down on the skewer. This will help in covering the strawberries. Dip the strawberries in the chocolate. Push the other end of the skewer into the Styrofoam. When finished dipping the strawberries, place them in the refrigerator for the chocolate to harden.

For the strawberries, place the pointed end down and run a skewer through the berry. Turn a second strawberry upside down and place it on the strawberry.

Choose the cookie cutter shapes you want to use for cutting the pineapple. If you are choosing a flower shape, use the melon baller and scoop out some balls from a slice of cantaloupe and honeydew. These will be used for the centers of the flowers.

Take a skewer with the pointed end up, poke it through the center of the pineapple far enough through to place the cantaloupe or honeydew melon ball onto. Alternate the cantaloupe and honeydew melon balls on the pineapple slices.

Take a chunk of cantaloupe and run the skewer through it and slide the piece down. Place a grape onto the skewer next followed by a chunk of honeydew, and add another grape.

Place a piece of star fruit onto a skewer. Follow it by a piece of kiwi. Then add a grape to hide the end of the skewer.

Place the iceberg lettuce in the bottom of the wicker basket. Place the kale leaves around the between the head of lettuce and the basket. Arrange the skewers into the head of iceberg lettuce in the manner you would use for silk flower arranging.

If you find you need more skewed fruit pieces, make them to fill in the holes. You can also use any extra kale to fill in the areas.
