My family became bored with the same boneless grilled chicken week after week, but I did not want to fry it. Breading and oil adds a tremendous amount of fat and calories. I did not want to smother it in condensed cream of chicken soup and bake it in the oven either. I have tried that method, and it leaves a lot to be desired. I had to find a homemade crispy coating that would stick to baked chicken, and it had to look and taste delicious.

My future daughter-in-law treated me to a dinner of homemade boneless baked chicken with crispy coating, and it was moist, tender and absolutely fabulous. It was close to what I was looking for, but I tweaked the recipe a bit to satisfy my personal preference. Try my recipe for homemade crispy coating, and enjoy boneless baked chicken that is sure to become your favorite. It is not fat free, but it is still much healthier than typical breaded and fried varieties.

Necessary Ingredients

For homemade boneless baked chicken with crispy coating you will need thighs or breasts, plain potato chips with ridges and two large eggs. You will also need lemon pepper seasoning or another favorite blend, cooking spray, genuine butter, a baking pan, a rolling pin, a small bowl, a fork and a gallon size storage or freezer bag.

Alternate Options for Homemade Crispy Coating

Plain potato chips with ridges are not required when preparing crispy homemade coating for boneless chicken. Any flavor and variety can be used. My future daughter-in-law used sour cream and onion and barbeque flavored chips. I used plain chips because they were all that I had. I used lemon pepper seasoning to make up for a lack of flavor. I could have used Italian seasoning, BBQ seasoning or any preferred blend when making my homemade crispy coating for boneless baked chicken.

Procedure

To make delicious boneless baked chicken with crispy homemade coating, begin by preheating the oven to 350 degrees Fahrenheit. As the oven is preheating, pour as many chips as necessary into a gallon size storage or freezer bag. Crumble the chips with a rolling pin, and scramble the eggs in a bowl. The chips do not have to be crushed. I prefer homemade crispy coating made with chips that are about the size of Rice Krispies. It turns out extra crispy when larger pieces are used.

Next, spray the bottom and sides of the baking pan with cooking spray. Dip the boneless chicken piece in the egg, and coat them with the crumbled potato chips. Arrange them in the baking pan, and top each coated piece with a small pat of butter before they are baked.

Bake the boneless chicken for 20 to 30 minutes or until it reaches an internal temperature of 165 degrees Fahrenheit. How long it takes will depend upon the thickness of the pieces. Chicken breasts will naturally take longer than thighs.
