Are you making a casserole for an upcoming potluck? Looking for a side dish for your Thanksgiving dinner? Just craving a hashbrown potato casserole with cornflakes on top? Here are a few hashbrown potato casserole recipes to try. While these are not the healthiest side dishes, they are quite tasty.

Hashbrown Potato Casserole Recipe Using French’s Fried Onions

This fabulous side dish uses the popular French’s Fried Onions, famous for the green bean casserole.

Ingredients: One (16 oz) package of frozen hash brown potatoes, 1/2 cup of milk, 1/2 cup of sour cream, 1 cup of shredded cheddar cheese, 1 (10 3/4 oz) can of cream of celery soup, and one teaspoon of salt.

Directions: Preheat onion to 350. Defrost the potatoes, either in the fridge overnight or microwave. Set aside some cheese and onions. Mix all remaining ingredients in a large mixing bowl. Transfer to a casserole baking dish. Top with the leftover cheese and onions. Cover with tinfoil. Bake at 325 for approximately 45 minutes to one hour. Remove tinfoil for the last five minutes of baking.

For a lighter version, use low fat sour cream instead. You can (of course) use fresh cubed potato instead of frozen ones.

Hashbrown Potato Casserole Recipe

Tex-Mex Hashbrown Potato Casserole Recipe

This is definitely a unique version. This is great for potlucks or anytime.

Ingredients: One (16 oz) package of frozen hashbrown potatoes, 1 (8 oz) can of corn (drained), 1 cup of black beans (drained), 1/2 cup of canned jalepeno (chopped), 1/2 cup of chopped onion, 1 (10 oz) can of cream of chicken soup, 1 (8 oz) container of sour cream, dash of salt, dash of cumin and 2 cups of shredded cheese.

Directions: Preheat oven to 350. Mix all ingredients in a mixing bowl, leaving some cheddar cheese aside. Pour mixture in a casserole baking dish. Top with remaining cheese. Cover. Bake for 45 minutes to 1 hour. Remove tinfoil for the last 5-10 minutes of baking.

To save time, use frozen chopped onions. You can buy these at Wal-Mart.

Traditional Cheesy Hashbrown Potato Casserole

While this is not great for your waistline, it’s a fantastic side dish.

Ingredients: One (16 oz) package of frozen hash brown potatoes, 1/2 cup of butter, 1 can of cream of chicken soup, 1 8 oz container of sour cream, 1 cup of shredded cheddar cheese, 1/4 cup of diced onion, dash of salt and dash of pepper.

Directions: After you have defrosted the potatoes, mix all ingredients into a casserole dish. Bake at 350 for one hour. Cover with tinfoil, and remove for the last 5-10 minutes of baking.

Hashbrown Potato Casserole with Parmesan Cheese

This hash brown casserole is scrumptious.

Ingredients: One 30 oz package of shredded hash brown potatoes, 2 cups of sour cream, 2 cans of cream of potato soup, 1 cup of grated Parmesan cheese, dash of salt and 2 cups of shredded cheddar cheese.

Directions: Combine all ingredients in a mixing bowl, after you have defrosted the potatoes. Transfer to a casserole dish. Bake uncovered at 350 for 45 minutes.
