When my brother lived near me, we used to gather on weekends and cook up a storm. He was the Master Chef and I his side kick. Mixed with a couple bottles of wine, we had a lot of good times. Today he shared with me his recipe for his Ham and Potato Bake. It is not a recipe for those watching your calories but if you enjoy good food, you will enjoy this. Today I dedicate this article to my brother Chris. Maybe one day soon we can cook together again…it will be a fun day when we do!

Ham and Potato Bake

Ingredients

2 Tablespoons Onion – chopped

¼(8 oz) Cheddar Cheese – shredded

½ Pound Ham (cubed, bite size)

6 Cups Potatoes (peeled, cubed & cooked)

Preheat oven at 350 degrees. In large pot, add medium heat sauté onion in butter. Slowly add flour, salt, dry mustard, and pepper, blending well. Gradually add milk. Gradually add milk, stirring constantly until thick. Add 1 ½ cups of cheese and stir until melted. Turn off heat, add cooked potatoes and ham. Toss until ingredients combined. Pour into 2-quart casserole dish. Sprinkle with remaining ½ cup cheese. Bake uncovered at 350 degrees for 30 minutes. Remove and cool for 10 minutes. Then dig in!! The combination is amazing and you will want seconds!

Note: To cook peeled and cubed potatoes before adding to cheese mixture, boil in water for 10 minutes and drain. They will cook the rest of the way while in the oven. Also feel free to add vegetables to the mix if you want, perhaps broccoli or peas or keep it the way it is. Just enjoy!
