Easy Appetizers for Game Day

Queso

Game Day is always an exciting time! With all the hype, you don’t want to be left out because you are too busy preparing food for your guests. These easy to make appetizers are simple to prepare and will leave you with plenty of time to watch the game and visit with your friends!

Hot Artichoke Dip
Ingredients:
1 Can Whole Artichoke Hearts in water – drained and chopped
1 Cup of Mayonnaise
1 Cup of Parmesan Cheese – shredded
5 Cloves of Garlic – minced
Preheat oven to 325 degrees. Mix all the prepared ingredients in small casserole dish. Place in oven and bake for 40 minutes or until top golden brown. Remove and let cool for 10 minutes. Serve with sliced banquette or crackers. For an extra kick add ½ cup of diced green chilies when initially mixing ingredients. So simple to make and such a great crowd pleaser that you may want to make a double batch.

Fresh Vegetable and Hummus Tray
Ingredients:
Bag of Cut Broccoli, Cauliflower and Snap Peas Medley
Bag of Baby Carrots
1 Container of Already-Made Hummus
Rinse vegetables. Arrange on round serving dish with opening in middle to place hummus. Refrigerate until ready to serve. A refreshing dish that is easy to prepare and will feed several. Your guests may also spread a little of the hummus on a cracker or slice of bread already on the table, creating another appetizer in a sense.

Eggplant Fritters
Ingredients:
1 Large Eggplant – peeled and cut into 1/4 inch slices
1 Cup Flour
Salt and Pepper – to taste (meaning put as much as you like)
Olive Oil – enough to cover bottom of frying pan about ¼ inch
Water
Ranch Salad Dressing
Preheat olive oil in frying pan at medium-high heat. In bowl mix flour, salt and pepper with enough water to create a mixture thick enough to stick to eggplant slices when dipped but not cakey. This will take a little guess work. You want it to stick so that it coats the eggplant. Once coated, place eggplant slices into hot oil. Turn a couple times, adjusting your heat so they will cook crispy and slightly brown. Place on paper towel to remove excess oil. Lightly sprinkle with salt and pepper. Serve warm with ranch dressing on the side. Your guests will probably dip the fresh vegetables from the hummus tray in the ranch dressing as well providing them with another option.

Chile Con Queso & Chips
Ingredients:
1 16 oz. Package of Velveeta Cheese
1 Large Tomato – diced
½ Medium Onion – diced
3 Jalapenos – diced
1 Can Cream of Mushroom Soup
½ Tablespoon Olive Oil
Water
1-2 Bags of Tortilla Chips
In a small frying pan, heat olive oil on medium setting. Add diced tomato, onion, and jalapenos. Cook until onions done. Remove from heat. Cut up Velvetta cheese into large cubes. Place in large bowl. Heat in microwave for one minute intervals. After each minute, stir the cheese and continue doing so until completely melted. Watch carefully as you do not want cheese to burn. When melted, add tomato mixture, can of cream of mushroom soup, and ½ can of water. Heat in microwave for 2 minutes. Remove and stir. You can add more water if too thick. Repeat heating in microwave in one minute intervals until heated throughout and thoroughly combined. Transfer to crock pot set on low to keep warm during the game. Serve with tortilla chips on the side.

Black Bean Nachos
Ingredients:
Chile Con Queso Dip (above recipe)
1 Bag of Tortilla Chips
4 Green Onions – diced
1 Small Container Sour Cream
1 Small Container of Salsa
1 Can Black Beans – drained
Prepare chile con queso dip as instructed above. Layer tortilla chips on large serving tray. Pour just enough queso dip over chips to lightly coat most of them. Wait until you are ready to serve or will get soggy if you prepare too far in advance. Mix sour cream and salsa, then pour over the queso dip. Sprinkle the onions and black beans on top. Ready to serve. Both this recipe and the queso recipe make a large portion so it will go a long way with your guests.
