Here are four easy and delicious recipes for striped bass.

Easy Fried Striped Bass

3 striped bass fillets
1 cup flour
1 cup cornmeal
dash each black pepper, Cayenne pepper, garlic powder, and salt
milk
olive oil

Heat olive oil in skillet on medium heat. Combine flour, cornmeal, and spices in a shallow dish and mix. Dip striped bass fillets in milk and then dredge through flour mixture coating fish thoroughly and evenly. Fry striped bass fillets in hot olive oil for 4 minutes, turn and fry 3 minutes or until fish is done. Drain on paper towels and serve. Serves 3.

Barbecued Striped Bass

6 large striped bass fillets
1 tablespoon Worcestershire sauce
¼ teaspoon paprika
½ cup salad oil
¼ cup white vinegar
2 tablespoons sugar
¼ teaspoon salt
¼ teaspoon pepper

Combine all ingredients except striped bass to make sauce. Brush striped bass with sauce, place on grill over hot coals. Grill 5 minutes on each side (or until done) brushing with sauce. Serves 6.

Easy Baked Striped Bass

4 to 5 lb striped bass, dressed
4 tablespoons mayonnaise
2 lemons, sliced
1 med onion, chopped
chopped or minced parsley
paprika
salt and pepper
olive oil

Preheat oven to 450 degrees. Sprinkle striped bass with salt and pepper and coat with mayonnaise. Place striped bass in a large pan greased with olive oil. Arrange lemon slices on top and sprinkle with onion, parsley and paprika (last two to taste). Reduce oven to 400 degrees and bake striped bass 10 minutes per pound. Serves 4.

Grilled Striped Bass

1 ½ lbs striped bass fillets, skin on
3 cloves garlic, peeled and diced
3 shallots, diced
2 jalapeños, diced
1 tablespoon Worcestershire sauce
butter
2 tablespoons fresh cilantro
1 cup fresh sliced tomatoes

Sauté garlic, shallots, and jalapeños in sauce pan with 1 tablespoon butter and Worcestershire sauce. When brown add 1 stick of butter to pan. Melt down and leave on low heat while preparing striped bass. Cut slits into skin to keep fillets from curling. Brush butter sauce on striped bass fillets until coated and grill over medium high heat. Put fresh cut cilantro and sliced tomatoes on top and baste with butter as needed. When striped bass flakes take it off grill. Serve over wild rice. Serves 4.
