Beef Tenderloin, Green Chiles

Beef Curry

What you will need:
1 pound stew beef cubed
2 tablespoons curry powder
1 ounce unsweetened chocolate
1/4 cup molasses
14 cup tomato sauce
1 quart orange juice
Salt & pepper to taste
3 tablespoons oil

How to Make:
1. Brown the stew meat in the oil over medium heat.
2. When the meat is lightly browned stir in the curry powder and continue browning.
3. Then add in the unsweetened chocolate, molasses, tomato sauce, and orange juice.
4. Bring to a boil.
5. Simmer about 1 hour. If needed you can add a little more juice.
6. Add salt & pepper to taste.

Beef In Chocolate Sauce

What you will need:
2 pounds beef tenderloin
Salt & pepper to taste
3 tablespoons butter
1/2 onion finely chopped
2 cloves garlic finely chopped
1/2 cup white wine
1/2 cup water
1 ounce unsweetened chocolate
1/2 pound queso fresco crumbled
2 tablespoons chopped parsley

How to Make:
1. Season beef tenderloin to taste with salt and pepper.
2. Fry the tenderloin in butter until browned.
3. Add the onion, garlic, wine and water.
4. Cover and simmer over medium heat for about 15 minutes.
5. Then add the chocolate.
6. Simmer uncovered for about 10 minutes.
7. At serving time slice the meat, pour sauce over the meat, then top with the cheese.
8. Put in oven on broil to melt the cheese.
9. Sprinkle with parsley.

Rosemary Beef Medallions

What you will need:
1 pound beef tenderloin
2 tablespoons butter divided
1/2 teaspoon cocoa powder
1/8 teaspoon salt
1 clove garlic finely chopped
1/4 teaspoon dried rosemary leaves
1/4 cup dry red wine or beef broth

How to Make:
1. Cut the tenderloin into 34 inch slices.
2. Heat 1 tablespoon of the butter in a skillet over medium to high heat.
3. Saute the tenderloin for 4 to 5 minutes on each side. Turn only once.
4. Saute until brown and center is medium rare.
5. Remove to a warm platter and keep warm.
6. Cook and stir remaining butter, cocoa powder, salt, garlic, and rosemary in skillet until bubbly.
7. Gradually stir in wine or beef broth.
8. Heat until it’s starts boiling. Let boil for about 1 minute.
9. Serve over the beef tenderloin.

Spanish Roast

What you will need:
4 pound roast
Flour
2 tablespoons oil
1 large onion sliced into rings
1 teaspoon salt
1/2 teaspoon black pepper
2 whole cloves
1 tablespoon vinegar
1 bay leaf
1 teaspoon cinnamon
2 tablespoons ketchup
2 cups water
2 ounces semi-sweet baking chocolate grated

How to Make:
1. Dust the roast with flour.
2. Brown in the oil on all sides.
3. Remove roast from skillet and set aside.
4. Put onion rings into a dutch oven.
5. Add salt and pepper.
6. Put roast ontop of the onion rings.
7. Then add the cloves, vinegar, bay leaf, cinnamon, ketchup and water.
8. Put the lid on the pot.
9. Let come to a boil and simmer for about 2 12 hours or until roast is tender.
10. Add grated chocolate and stir around roast.
11. Let cook for another 15 minutes then remove cloves and bay leaf.

Calzone Pie

What you will need:
2 pounds frozen bread dough thawed
1/2 pound ground beef
1/2 pound ground pork
1/2 cup white wine
1 medium onion chopped
1 ounce semi-sweet chocolate grated
1/4 cup almonds chopped and toasted
3 egg whites stiffly beaten
1 yolk

How to Make:
1. Saute the onion in a skillet.
2. Stir in the meat, then add salt and pepper to taste.
3. Add the wine and let simmer until the liquid is evaporated.
4. Stir in the chocolate and almonds.
5. Let simmer over low heat for about 30 minutes stirring occasionally.
6. Fold in the beaten egg whites and remove from the heat.
7. Pat the bread dough into two equal circles.
8. Place one of the circles into a greased pie plate.
9. Pour in the meat mixture and top with the other circle of dough pressing to seal the edges.
10. Prick the top of the dough with a fork.
11. Brush top with beaten egg yolk and bake for about 20 minutes in a 400 degree oven.

Sweet and Salsy Meat Loaf

What you will need:
1 1/2 pound meat loaf mix (beef, pork, or veal)
3/4 cup bread crumbs
1 egg
1 cup salsa
1 can (4.5oz.) chopped green chiles
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh parsley
1 teaspoon unsweetened cocoa
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon chili powder
1 teaspoon lemon juice

How to Make:
1. Heat oven to 350 degrees.
2. In a large bowl combine meat mix, bread crumbs and egg. Mix well.
3. In another bowl combine the salsa, green chiles, cilantro, parsley, cocoa, salt, garlic powder, cumin, cinnamon, chili powder and lemon. Mix until well combined.
4. Add 34 cup of the mixture to the meat mix and mix well.
5. In an ungreased 1 1/2 or 2 quart casserole or a 9 by 5 inch loaf pan, shape the meat mixture into a loaf.
6. Bake at 350 degrees for 50 minutes.
7. Remove the meat from the oven.
8. Spoon the rest of the salsa mixture ontop of the meat loaf.
9. Return to the oven and cook for another 20 to 30 minutes.
