Quick and Easy Beef Stew

This is a simple to make stew that you can use with any amount of left over beef. it also works great with left over ground beef.

1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can ranch-style beans
1 (19 ounce) can minestrone soup

Place beef, beans, tomatoes, and soup in a large saucepan over medium heat. Stir freguently until heated through, 15 to 20 minutes.

Steak Fajitas

This is a great quick and easy recipe to use with left over steak that is already seasoned from the original meal.

Left over steak, cut into strips
2 teaspoons vegetable oil
2 cups vegetables
1 tablespoon lemon juice
Flour tortillas
Salsa
Shredded Monterey Jack cheese
Sour Cream

In a large fry pan add the oil, steak strips, and vegetables. Cook and stir for 1 to 2 minutes. remove from heat. Sprinkle with lemon juice. Spoon onto tortilla shells and add salsa, cheese, and sour cream as desired. Wrap up and serve.

Beef Noodle Soup

This is another wonderful recipe that can incorporate any left over beef you might have. This soup tastes great and is easy to make.

Left over beef, cubed
1 medium chopped onion
2/3 cup chopped celery
2 tablespoons beef bouillon granules
1/8 teaspoon dried parsley
2/3 cup chopped carrot
3-3/4 cups water
1-2/3 cups egg noodles

In a large saucepan over medium heat, saute the meat, onion, and celery for 5 minutes. Stir in the bouillon, parsley, carrots, water, and egg noodles. Bring to a boil, reduce heat to low and simmer for 30 minutes.

This is a hardy meal that can be made out of any left over beef you have. Serve with dinner rolls and it will leave no one hungry.

5 medium potatoes, peeled and chopped
1 (10.75 ounce) can condensed mushroom soup
1 (14.5 ounce) can green beans, drained
1 (15.25 ounce) can whole kernal corn, drained

Preheat oven to 375 degrees F (190 degrees C). Place potatoes into a large saucepan with water, bring to a boil, and cook for 8 to 10 minute, or until tender. Drain and mash. While potatoes are cooking mix together mushroom soup, green beans, corn, and beef. Mix thoroughly then transfer into an 8 inch square baking dish. Spread the mashed potatoes evenly over the top. Bake for 20 to 25 minutes in the preheated oven,or until top is golden brown.

Spicy Chili

Most people think of ground beef when you make chili, but this recipe can be made with any kind of left over beef.

1 (15 ounce) can chili beans, drained
1 (15 ounce) can chili beans in spicy sauce
1 (28 ounce) can diced tomatoes with juice
1 (6 ounce) can tomato paste
1 medium yellow onion, chopped
1 green pepper, seeded and chopped
1 red pepper, seeded and chopped
1 3/4 teaspoons minced garlic
1 3/4 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1 (8 ounce) package shredded cheese
Left over beef, shredded

Heat a large pot over medium-high heat on the stove top. Mix together beef, chili beans, diced tomatoes, and tomato paste. Stir and let cook for 8 to 10 minutes. Add in the onion, green pepper, red pepper, garlic, oregano, basil, paprika, and cayenne pepper. Cover and let simmer for 2 hours, stirring occasionally.
