Three Vegan Banana Bread Recipes!

Banana Bread, Nut Free, Soymilk, Vegan Chocolate

Growing up, one of my favorite treats that my mom would bake for me was the banana bread! Sometimes she would add chocolate chips in the bread. I would often eat a slice topped with butter. So delicious! Once I started to experiment with vegan recipes, I decided to bake vegan pastries. It can be a challenge at first but once you get used to it, it’s smooth sailing! Here’s three delicious vegan variations of the incredible banana bread!

Vegan Banana Bread

2 cups flour
1 ½ tsp baking powder
½ tsp baking soda
5 tbsp vegan margarine (oil can be used instead if desired)
3/4 cup sugar
3 medium sized bananas, mashed
½ cup applesauce (tinned pears can work too – this will help the bread become more moist)
1/4-1/2 c. soymilk
1 tsp vanilla extract

Pre-heat oven to 350 Fahrenheit.
Lightly oil and flour a loaf pan and set aside. In a large mixing bowl, stir flour, baking powder, and baking soda together. Set aside. In a separate smaller bowl, cream the margarine and sugar. Once creamed, stir in the mashed bananas, applesauce, 1/4 soymilk, and vanilla. Mix well. Pour the wet mixture into flour mixture. Mix throughly, add more soymilk if it’s too thick. Vegan Chocolate Banana Bread (wheat, egg, dairy, and nut free)

In a large bowl, mix oil, sweetener, apple juice, and vanilla together. Stir in egg-replacer and mix well. Add the baking powder, salt, and oat flour. Stir. Add brown rice and buckwheat flour, stirring until just combined [do not over-stir!]. Fold in the bananas and non-dairy chocolate chips. Pour into a 8 inch oiled loaf pan for one hour. Poke center with a toothpick, if it comes out clean, the loaf is done. Cool for twenty minutes before consuming.

Vegan Banana Almond Bread

1 ½ cups flour
1 tsp baking powder
½ tsp salt
1 cup mashed banana (usually two medium sized bananas)
½ cup sweetener
1/4 cup applesauce
1/4 cup soymilk
2 tsp almond extract
1 tsp vanilla extract
½ tsp baking powder + 2 T water (egg replacer)

Preheat oven to 350 Fahrenheit.
In a large bowl, mix bananas, soymilk, applesauce, egg replacer, and almond extract together. Add sugar and almonds and stir once again. Set aside. In a small bowl, sift the flour, baking powder, and salt. Then pour the dry mixture into the wet mixture. Mix until moist [do not over-mix!]. Pour into a greased loaf pan. Bake for thirty minutes, check with a toothpick to ensure it is ready. Let cool.
