How to Make Bubba’s Red Slaw

I’m sure every person has their own favorite BBQ sauce recipe. I am equally sure that your BBQ ribs, chicken, sausage, and brisket is an award winning experience each time you serve it. I believe the enhancement to any BBQ will make or break the entire meal. I recently heard of a super slaw that really puts the excitement into a BBQ. This style red slaw was originated if you will in Lexington, North Carolina. I’ve seen it used on top a BBQ Pork sandwich or as an enhancement to the traditional slab of ribs or chicken. My quest for the perfect yet simple recipe has brought the following Divine inspiration just to share with you

Bubba’s Red Slaw

Ingredients:

1 pound Dole prepared cole slaw mix

20 oz can Dole pineapple tidbits packed in own juice

2 Tablespoons Oil (your favorite light oil)

1/3 cup smoky sweet BBQ Sauce (Use your favorite)

1/3 cup apple pure apple cider vinegar

1/3 cup light brown sugar (packed)

7 oz jar of salad olives drained (optional)

Directions:

In a small sauce pan drain pineapple juice, add, BBQ sauce, apple cider vinegar, oil, and light brown sugar. Bring to a simmer and stir till sugar dissolves and sauce thickens. Set aside to cool to room temp. Toss cole slaw mix, optional salad olives, drained pineapple and reduced sauce, chill (overnight is best) toss again and serve

Notes:

The Queen Goddess also likes to add a single serving size bag of sun flower nuts for additional crunch. I have also mixed a bag of Dole Broccoli Slaw with a bag of Dole prepared cole slaw and doubled the sauce ingredients for an interesting change of pace. This will hold up well for 6-7 days in the refrigerator.

One enhancement that I’ve read about is adding a grated Granny Smith apple to the basic recipe. If you try that let me know how it turns out please.
