Easy Jiffy Blueberry Muffins

Why not treat your family to some fresh blueberry muffins for breakfast just like your mother used to make! The blueberry muffin recipe below is very easy to make because it uses Jiffy Baking Mix. All you have to do is add a few ingredients and in no time you will have delicious muffins to serve to your family!

Ingredients for Easy Jiffy Blueberry Muffins

2+1/2 cups Jiffy Baking Mix
1/2 cup sugar
3/4 cup milk
1 egg
2 teaspoons melted shortening
2 cups blueberries (fresh or frozen)

Directions to Make Easy Jiffy Blueberry Muffins

Step 1: Blend the Jiffy Mix, sugar, milk, egg and shortening by hand. If the batter is too thick, you can add a bit more milk.

Step 2: Fold in the blueberries (note: if you are using frozen blueberries you can toss them in while frozen or you can thaw and drain them first).

Step 3: Lightly grease muffin pan or use muffin cup liners and fill each cup 3/4 full with batter.

Step 4: Sprinkle each muffin with a little sugar (optional).

Step 5: Bake at 400 degrees for 15 to 20 minutes.
