Begin with Homemade Whipped Cream

No matter which cake roll fillings you choose, instead of buying ready-made whipped cream in a plastic container try this old-fashioned whipped cream recipe. Begin by whipping one cup of heavy cream until it begins to thicken, and gradually add three tablespoons of sugar and one teaspoon of vanilla. When making pineapple filling, substitute almond extract for vanilla in this recipe, and beat the ingredients with a hand mixer until stiff. Chill it immediately.

Tasty Strawberry Fillings and Toppings

Thaw and drain approximately 10-ounces of frozen strawberry slices, and gently fold them into homemade whipped cream. Spread it on the cake, and roll it before refrigerating. While the cake roll is chilling, bring one-quarter cup of strawberry jam and one-quarter cup of light corn syrup to a boil, and after it cools, brush the glaze on top of the roll. In addition, combine one cup of strawberry jam with one cup of light corn syrup in a saucepan, and bring it to a boil. In the meantime create a glaze by combining one-quarter cup of apricot jam and one-quarter cup of light corn syrup. Bring this mixture to a boil, and after it cools brush it on top of the roll. Make a delicious pineapple sauce by combining one 9-ounce can of drained crushed pineapple and one cup of light corn syrup. Once it cools pour some of this sauce over each individual slice of cake shortly before serving along with a dollop of homemade almond flavored whipped cream.

Creamy Chocolate Fillings and Toppings

After mixing up a batch of homemade whipped cream, spread it over a cool cake, and sprinkle the whipped cream with a generous amount of mini chocolate chips before rolling. Sift confectioner’s sugar over the top of the rolled cake, and keep it well-chilled in the refrigerator until ready to serve. In the meantime, create a creamy chocolate sauce by placing one-half cup of butter, two and one-quarter cups of evaporated milk, and 4 ten-ounce squares of unsweetened baking chocolate in the top of a double boiler. Stir constantly while the butter and chocolate melt. Next, slowly stir in three cups of sugar, and heat the mixture until the sugar dissolves completely. Cool and refrigerate the sauce until ready to serve the sliced cake rolls. If the sauce becomes too thick it can be thinned down with a small amount of light corn syrup. This recipe makes one quart of chocolate sauce, and it can be used to top ice cream as well as cake.

Begin by folding approximately three-ounces of chopped pecans into homemade whipped cream, and spread this mixture over the cooled cake. Roll the cake and refrigerate it immediately. Next, make a glaze by combining one tablespoon of melted butter with one-quarter cup of light corn syrup. Brush it over the cooled cake and sprinkle it with about one-quarter cup of chopped pecans. To make a sauce to serve with the cake roll, combine two-thirds of one cup of light corn syrup with one and one-quarter cups of light brown sugar, one-quarter cup of butter, and one-quarter teaspoon of salt. Bring this mixture to a boil, and allow it to cool completely. Stir in one can of evaporated milk for a quick and easy butterscotch sauce that is sure to bring rave reviews.
