Make sure they are spread out and only one layer deep. Preheat the oven to 350 degrees Fahrenheit. If the nuts are shelled, roast them for approximately 20 minutes, and if they are in the shell, roast the nuts five minutes longer. Remove them from the oven just before they have reached the desired level of doneness. Peanuts retain heat and will continue roasting after being removed from the heat source. Microwave Roast Shelled Nuts

Peanuts can be roasted in a microwave oven very quickly and easily. Begin by buttering the bottom of a glass baking pan, and cover the bottom with a single layer of raw shelled peanuts. Microwave the nuts on high for about 90 seconds and stir. Continue this process of checking and stirring until they have reached the desired level of doneness.
