5 Easy and Delicious Meatball Recipes

Meatball Recipe, Turkey Meatballs

Want to make spaghetti and meatballs for dinner? Craving a homemade meatball sub? Just need an easy recipe for meatballs? Here are a few recipes on how to make meatballs. Meatballs are fairly easy to make, freeze well, are high in protein, and can be quite tasty.

Basic Meatball Recipe

This simple meatball recipe calls for one pound of ground beef, a large egg, 1/3 cup of Italian breadcrumbs, 1/4 cup of chopped onion (you can use the frozen kind), 1/4 cup of milk, a teaspoon of Worcestershire sauce, teaspoon of pepper and a teaspoon of salt.

Preheat oven to 400 degrees. Combine all of the ingredients together in a mixing bowl.

Lightly grease a baking dish.

Shape the meat mixture into small balls, about an inch or so in diameter. (I prefer to use disposable gloves since I despise touching raw meat.) Place the meatballs onto the baking dish.

Bake uncovered for about 23-25 minutes. These are perfect with a spaghetti dinner.

Spinach Meatballs

If you want to hide some veggies into your child’s meal, spinach meatballs are a great choice.

To make spinach meatballs you need one pound of lean ground beef, a ten ounce package of frozen spinach, one teaspoon of garlic powder, one teaspoon of onion powder, one egg, 1/3 cup of Italian seasoned breadcrumbs, one teaspoon of salt, and one teaspoon of pepper.

Preheat oven to 350 degrees.

Combine all ingredients into a mixing bowl. Stir well.

Shape into small meatballs and bake for about 45 minutes. (You could also bake then at 400 degrees for less time.)

Microwave Turkey Meatballs

If you are looking for a meatball recipe that is lower in fat, this is an excellent one to try.

Turkey meatballs call for 1 1/4 pounds of ground turkey, 1/2 cup of milk, 3/4 cup of breadcrumbs, one egg white, three tablespoons of ketchup, 2 1/2 tablespoons of grated Parmesan cheese, one teaspoon of garlic powder, one teaspoon of dried basil, and 1/2 teaspoon of ground pepper.

Mix the meatball mixture thoroughly. Shape into small meatballs onto a microwave safe dinner plate. Microwave at 70% power for 4 minutes, 40 seconds. Turn meatballs over and microwave again at 70% power for 3 minutes, 10 seconds.

You will probably need to divide the meatballs into two batches, depending on the size of the microwave.

Meatballs with Mozzarella Cheese

Another idea is to make meatballs that include cheese. These are great with spaghetti. It calls for one pound of ground beef, 12 oz of spicy ground sausage, 2 eggs, 1/4 cup of breadcrumbs, 1/4 cup of grated parmesan cheese, 1 teaspoon of garlic powder, 1/4 cup of onion, and 1/2 pound of mozzarella, cut into small cubes.

Combine all ingredients, except for the mozzarella cheese, into a mixing bowl. Take a small cube of mozzarella cheese, and form the meat mixture around it, so that the cheese is stuffed in the meatball.

Heat a large skillet and coat it with olive oil. Cook meatballs on medium heat until browned and done.

Enchilada Meatballs

These are fantastic for party appetizers or in a unique meatball sandwich.

It calls for 2 cups of crumbled cornbread, 1 1/2 pounds of ground beef chuck, 1 (10 oz) can of enchilada sauce, 1 teaspoon of salt, 1 teaspoon of cumin (optional), 1 10 oz can of tomato sauce and 1 cup of shredded Mexican blend cheese.

Preheat the oven to 350.

In a mixing bowl, combine the cornbread crumbs, half of the enchilada sauce, half of the cheese, salt and cumin. Add the beef and blend well.

Shape into small meatballs and bake for 20 to 22 minutes.

For an appetizer, the meatballs are great served in a sauce. To make the sauce, mix the tomato sauce and remaining enchilada sauce in a saucepan. Pour the sauce over the meatballs, and sprinkle the remaining cheese on top. Serve with toothpicks.
