Are your kids tired of the same old scrambled eggs, toast and cereal? Try these fun and easy breakfasts to give them some variety.
Egg pizzas
Top English muffin halves with scrambled eggs. Sprinkle shredded cheese on top of the hot eggs so it will melt. If you like, add onions, peppers, tomatoes or other chopped veggies to the eggs. These are easiest for the kids to eat if you scramble the eggs before putting them in the pan, cook them till they’re set and then flip them rather than scrambling them while they cook. If you’re only making one, a very small skillet makes the perfect sized egg to top the muffin; if you’re making more, use a large pan and cut the egg into quarters before you flip it.
French toast sticks
Most kids love to dip their food into sauces. The next time you make French toast, use a pizza cutter to cut each slice into three or four sticks. Serve the sticks with a little bit of syrup or jelly, or sprinkle them with powdered sugar or cinnamon-sugar. You can add cinnamon, a little sugar, or even a little bit of syrup to the egg mixture you dip the bread in, and no topping or dipping sauce is necessary.
Egg in a hole
My dad used to make this for me and my brother for dinner when my mom worked late, and we loved it. Tear a hole about the size of an egg yolk in the center of a piece of bread. Place the bread in a buttered skillet and break an egg into the hole. Cook till set on the bottom, flip it, cook till it’s done.
Fruit plate
Offer a plate of assorted small and sliced fruits with peanut butter and yogurt for dipping. Try grapes, apples, orange segments, cherries, cantaloupe, honeydew, bananas, kiwi, starfruit…any kind of fruit your kids will eat.
Peanut butter and banana sandwich
There are a couple different ways to do this. You can spread peanut butter on bread and top it with thinly sliced bananas. Or, you can halve a banana and spread the peanut butter on the fruit.
Smoothies
Put a cup or two of yogurt, plain or flavored, into your blender. Add fruit-softer ones like bananas, peeled ripe peaches or berries work best. Frozen berries work very well and watermelon is a nice addition especially on a very warm day. Add a little ice if you want, and if you’re using plain yogurt or tart fruits you might want to add honey to taste. Blend until it’s smooth. You can play with this quite a bit-try different kinds of fruits and yogurt or try it with just yogurt, fruit juice and ice. You can use mostly fruit and add a little bit of milk or juice, and ice for a very fruity smoothie.
Toast and cocoa
This is what my mom used to make on cool mornings, and it’s still one of my favorite breakfasts. It’s very simple: just dip buttered toast sticks or points into a mug of hot chocolate and eat.
Breakfast tea party
Your little princess might enjoy this one. Fix cups of herbal tea and add ice or milk to cool it if necessary. Cut buttered toast into “cookies” using cookie cutters. You can cut two of the same shapes and spread jelly or peanut butter between them to make sandwich cookies if you like. Put on your tiaras and enjoy tea and cookies for breakfast.
Leftovers
Don’t discount leftovers from last night’s supper as good breakfast choices. Many people enjoy pizza for breakfast. Leftover hot dogs or smoked sausage can be cut up and scrambled with eggs, and leftover veggies can be added to omelets. Leftover white rice can be reheated and flavored with butter and sugar; most kids love this breakfast.
