Amy’s Tofu Scramble Mexican Review

Amy’s Tofu Scramble Mexican, formerly known as “Tofu Rancheros” is an extremely hearty stick-to-your-bones gluten-free breakfast, lunch or dinner.

Unlike Amy’s Tofu Scramble with Hash Browns, this meal is not easily heated up on the stove due to the black beans. I heated it up in the stove at 400 degrees. I covered it with foil after taking off the plastic wrapper.

Amy’s Tofu Scramble Mexican breakfast has chunks of white potatoes. I could see green chilies in the tofu mixture as well as kernels of corn. A layer of salsa smothers the tofu. On the side is a generous portion of black beans. I was surprised it also included a small organic corn tortilla.

Amy’s Tofu Scramble Mexican is a great gluten-free option for people on the Amy Kitchen Diet. A lot of college students like the convenience of Amy’s foods while dieting.

Here are some things I learned about Amy’s Tofu Scramble Mexican gluten-free meal during my review.

No.1. Amy’s Tofu Scramble Mexican has 400 calories which is a bit high for me for a dinner on the Reverse Diet. I had Amy’s Mexican meal early in the day and shared some of it.

No. 2: Amy’s Tofu Scramble Mexican has 18 grams of fat which is fine for being on a moderate fat diet. It also has 8 grams of fiber which kept me full for hours.

No. 3: Vitamins in Amy’s Tofu Scramble Mexican include 8 percent of the daily recommended Vitamin A, 35 percent vitamin C, 25 percent calcium and 20 percent iron. It also had a whopping 20 grams of protein.

No. 4: Ingredients in Amy’s Tofu Scramble Mexican include organic this and that: black beans, tofu, roasted potatoes, onions, green bell peppers, green chilies, jalapeno peppers, Monterey Jack cheese (this Amy’s meal is not diary free).

No. 5: Amy’s Tofu Scramble Mexican is not as spicy as you might expect. But they recommend topping with Amy’s bottled salsa. I would have to agree. It’s a fairly mild dish so add some zing on your own.

Amy’s Tofu Scramble Mexican is one of the best frozen gluten-free meals if you are looking for something with a Mexican or Southwest flair. It’s an extremely high-fiber option for those trying to watch their weight. Although Amy’s Tofu Scramble Mexican may seem somewhat high in calories, it includes a lot of nutritious ingredients to help you stay full longer.
