Cookies and Cream Desserts

Ingredients:
1 roll (16.5 oz) refrigerated cookie dough
2 packages ceam cheese, softened
1/4 cup sugar
1 cup strawberry, chocolate or caramel ice cream topping
2 eggs
1 container (16oz) whipped cream
Food coloring (optional)
Fresh strawberries or chocolate chips (optional)
13×9″ baking pan

When the weather starts warming up we all start looking for ways to cool down. We head to our kitchens to whip up some milk shakes, prepare ice cream sundaes or to create other cooling treats. One thing that’s especially refreshing in the summer is strawberries. If you’re a bit bored with the traditional strawberry treats, and you’re longing for something different, make cream squares. They’re easy to prepare, cool and refreshing.

Refrigerated cookies make it really easy to treat your family to scrumptious, cookies and cream desserts. Purchase a roll of sugar cookies to make a strawberry treat they’ll love. Start by pressing the dough into an ungreased,

13×9″ pan. If the dough sticks to your fingers simply flour your hands as you press it into the pan. Heat the oven to 350 degrees.

Beat together two packs of softened cream cheese (16oz, total), a quarter-cup of sugar, and three-quarters cup of strawberry ice cream topping (you’ll need an 11.75oz jar of the topping). Beat well, add two eggs, then beat until creamy. Spread the topping all over the cookie crust and bake for 30 to 35 minutes. Remove from the heat and allow to cool completely – about an hour.

Mix a 16oz bowl of whipped cream, softened, and the remainder of the strawberry ice cream topping together in a medium bowl. To make the topping look even more scrumptious add a couple of drops of red food coloring into it. Mix well then spread it over the cream pie. Chill for a couple of hours or until well-set. Top with fresh strawberry slices (optional).

You can make other cream pies by simply substituting some of the ingredients. For instance, you can substitute chocolate chip cookies for the sugar cookies. Mix chocolate ice cream topping into the cream cheese, as stated above, to make the chocolate chip version. Or, substitute peanut butter cookies for the sugar cookies, then mix the chocolate syrup with the cream cheese to make a peanut butter-chocolate chip version. Make a caramel cream pie by mixing caramel with the cream cheese and pouring it over a chocolate chip or sugar cookie bottom.

When you stir up the whip cream topping you can stir in chocolate chips for the peanut butter or chocolate chip cream dessert. Make any one of these pies for your family and they’ll beg for another. Then, the next time, try one of the others. Your family is going to love them!
