Chocolate Ganash – A Recipe

Some people are afraid of making homemade candy, but I do it every year. This is a very simple candy filling recipe and my absolute favorite. It is my basic recipe for the truffles that I make at Christmas time.

What you will need:

1 cup heavy whipping cream

1 bag chocolate chips

Put heavy whipping cream and chocolate chips into medium sauce pan.

Cook on a low heat stirring constantly until chocolate chips are about half melted.

Remove from heat and stir with a wire whisk until smooth.

This can be served warm over ice cream.

You can freeze it in ice cube trays and then put them in the middle of cake batter, before baking, for a chocolate cream filled cake.

You can add any type of flavoring you like, I prefer almond, after you have beaten smooth and then chill. Roll spoonfuls of ganash into 1 inch balls and then roll in baking cocoa for a classic truffle. Or dip balls into chocolate for a chocolate covered truffle.

Serve and enjoy!

hint: If you melt a small bit of paraffin wax in your dipping chocolate, it will keep your candies from melting.
