Hodgson Mill’s Buckwheat Pancake Mix

I grew up eating Aunt Jemima’s pancake mix which I completely loved. But earlier this year I decided that if I was going to eat pancakes occasionally. I would get the healthiest kind possible, which would be those made with whole grains. I found a box of Hodgson Mill’s Buckwheat Pancake Mix at a local grocery store and decided to try it.

Hodgson Mill’s says they’ve been producing fine foods made from grain for over 100 yrs. Their pancake mixes are whole grain, stone ground without artificial preservatives or synthetic additives. They promise a wholesome, delicious, and satisfying product.

When I first tried these pancakes, I made them with some hemp milk I had on hand. That was a big mistake, they tasted way too nutty, and the milk was so thin that they were extremely dry even after I put a ton of butter on them.

So the next time I made them I decided to use buttermilk, and they still turned out a bit drier than I expected. It was only until I read the instructions and saw that you once you mix together all of the ingredients, you have to let it stand for 5 minutes.

During those 5 minutes the mix absorbs the liquid from the milk and egg and becomes thicker, so then you can see if you need to add more milk. I typically add more buttermilk than it seems like I need, because the mix always thickens, and I also add bacon grease instead of the recommended vegetable oil, and they still come out only slightly moist.

Taste of

The first few times I tried these pancakes I didn’t love them, because they were thicker and had a nuttier, earthier flavor than the processed pancakes I grew up on. They also weren’t sweet at all. But I still liked them and I knew I would get used to them eventually.

After eating them more and more I did begin to love them. They are filling. I eat them with maple syrup and bacon and they don’t spike my blood sugar, and they leave me feeling satisfied for hours. And they look (the mix is brown, not white) and taste more like real food than the artificial mixes.

I had to get used to the more nutty, earthy flavor but it tastes so much more interesting than the Aunt Jemima brand that I used to love. I actually had some of those pancakes a few months ago at my mom’s house and I thought they were awful. They had no flavor, were too doughy, and weren’t as satisfying.

In the End..

I love Hodgson Mill’s Buckwheat pancakes, they are delicious. If you grew up eating the enriched bleach flour kind, it might take some getting used to because they do have a drier texture and they have a completely different taste. But you can definitely grow to love and appreciate their texture and taste. I give them 4.5 out of 5 stars.
