Recipes Using V8 Juice

Want to add some hidden nutrition to your child’s diet? Just have an extra bottle of V8 juice you want to use? Here are some easy recipes that call for V8 juice. They are great if you need extra vitamins and minerals but despise easting veggies.

Meatloaf

This is very tasty and moist. The V8 is poured over the meatloaf. The ingredients are one pound of lean ground beef, two tablespoons of sour cream, two tablespoons of ketchup, two tablespoons of flour, one egg, one 1.5 oz envelope of dry onion soup mix, 1/2 cup to 3/4 cup of ketchup, and 1/3 cup of spicy hot v8.

Preheat the oven to 400 degrees. Combine the sour cream, egg, ketchup, flour and soup mix together in a mixing bowl. Add the ground beef and stir well. (I usually wear disposable plastic gloves, and mix with my hands.) Shape the mixture into a loaf. Bake for 13 minutes. Remove from oven and drain any fat from the loaf pan. Coat the top well with the ketchup. Pour the v8 juice around the edges. Bake for an additional 30 to 35 minutes.

This is perfect when served with a green bean casserole, or just any vegetables.

Crockpot Chili

One fantastic recipe that calls for V8 is chili. This is great for chilly days, or just anytime you want to add some fiber to your diet.

Ingredients for this V8 chili include one 15 oz can of chili beans, one 15 oz can of kidney beans, one pound of lean ground beef, one 48 oz jar of spicy hot V8, one teaspoon of garlic, 2 teaspoons of chili powder, 1 teaspoon of cumin, and 1 teaspoon of cayenne pepper.

Brown the ground beef and garlic powder in a skillet. Add it and the remaining ingredients to the crock pot. Cook on high for 2 1/2 to 3 hours. Add additional chili powder and cayenne to taste. If desired, top each serving with shredded cheddar cheese.

You could also cook this on low all day, without browning the meat first. Add about 1/4 cup of water if you choose to do this.

Super Easy V8 Soup

This soup only calls for two ingredients – V8 and 2-4 oz of mozzarella cheese. Heat the V8 in the microwave until bowling. Add the mozzarella cheese and serve immediately. You can experiment with this soup recipe by adding ingredients such as cubed pepperoni, chopped black olives, shredded chicken, etc.

Crockpot Chicken

This V8 recipe is a healthy choice if you are watching your weight. The ingredients are two boneless, skinless chicken breasts, 2 cans of v8, one cup of chopped onions, and 3 cloves of chopped garlic. Cook all ingredients in the crock pot on low for about 9 hours, or medium for 6 hours.

V8 Crockpot Chicken Soup

This Tex-Mex soup recipe calls for 2 cups of cooked shredded chicken breasts, 1/2 cup of water, 1 envelope of taco seasoning, one 32 oz can of V8, one 16 oz jar of salsa, one can of black beans, one 10 oz package of frozen corn, 1/2 cup of shredded cheddar cheese, one 8 oz container of sour cream.

Mix all ingredients in a crockpot. Cook on low for about 3 hours, or until completely heated through. This is great when served with tortilla chips.

V8 Pancakes

This recipe calls for V8 splash strawberry kiwi juice. It only makes two servings, however you can double the amounts for more.

The ingredients are two large eggs, 1 tbsp baking powder, dash of salt, 1/2 tbsp of crisco pure vegetable oil, 1/4 cup of v8 strawberry kiwi splash juice, and 3/4 cup of flour.

Mix eggs, baking powder, salt and oil until frothy. Add flour, but be very careful to not over stir. Pour and cook in a nonstick frying pan.
