How to Make an Ice Cream Cake at Home

Recently, I bought a very expensive ice cream cake from a well known upscale ice cream shop. I didn’t want to buy the expensive ice cream cake, but it was my daughters birthday and in the spirit of celebration I caved and bought the cake. This cake was out of this world delicious, in fact I liken it to heaven on a plate. However, with every bite I took of it I could only think that because the ice cream cake was so expensive I would never be buying it again. Eventually though, it occurred to me that I could easily make this delicious ice cream cake at home. There are many ways that you can variate this recipe to your own taste, but this would be the basic guidelines you would follow to make this heavenly ice cream cake.

Cake
The thing about this ice cream cake that was so utterly delicious, was that it was actually ice cream and cake layered together to make one delicious dessert. So, the first thing that you have to do when making this cake is decide what type of actual cake will be in your ice cream cake. The ice cream cake I bought had red velvet cake in it, it was a nice flavor, so I would certainly recommend it. However, when making this cake at home the possibilities are endless. After you make your cake selection, you obviously need to bake your cake. You will bake your cake in two nine inch rounds. When your cake is baked, you will place the two cake rounds in the freezer for at least an hour. They need to be cold so they don’t melt the ice cream when you are putting the actual ice cream cake together.

Ice Cream
Next, you need to select what type of ice cream will fill your cake. When we bought the ice cream cake from the ice cream shop it had had a unusual gourmet flavor. Obviously, you can select any flavor of ice cream that you want, but I would look for something soft serve or churned so that it is more spreadable.

Icing
Just like any normal cake, this ice cream cake had icing. The icing on the ice cream cake that I had purchased was butter cream. Again though, you are making this at home so use any combo of cake, ice cream and icing that you like. You can also make a whipped cream frosting. This type of frosting spreads easy and is used often in ice cream cakes.

Assembly
Once you have decided on all your ingredients, you can go ahead and put your ice cream cake together. First, place one of the cold or frozen cake rounds on your cake plate. Next, spread your chosen ice cream on the top of that cake round. This layer of ice cream should be spread about as thick as the cake round itself. Then, you place the second cake round on top of that layer of ice cream cake. Again, you will spread the ice cream on that cake round and spread it as thick as the cake round. Place the almost finished cake in the freezer for about an hour. After it has been out for an hour ice the cake on the sides and top. Decorate it, serve it and keep it in the freezer when you are not eating it.

This can be such a fun project. It can be made into so many different flavor combinations and is absolutely delicious almost anyway that you make it.
