Favorite Cake Recipes for Father’s Day

Favorite Father’s Day Cakes

Looking for cakes for dad that are easy for the kids to join in and help? Father’s Day is not too far away. Although it doesn’t get the “fanfare and hooplah” that Mother’s Day gets, it is every bit as important. All men love cakes. The following are some of my favorite cake recipes.

Strawberry Shortcake

2 pt. strawberries, sliced

2/3 cup sugar

2 ½ cups baking mix

3 tbsp. sugar

3 tbsp. margarine, melted

½ cup milk

Sugar

¾ cup whipping cream

Sprinkle strawberries with 2/3 cup sugar; let stand at least 1 hour. Preheat oven to 425 degrees.

Combine baking mix*, 3 tbsp. sugar, margarine and milk. Stir until soft dough forms.

Drop by rounded tablespoonfuls into 6 mounds on ungreased cookie sheet. Sprinkle with sugar. Bake at 425 degrees for 10 to 12 minutes or until golden brown. Split shortcakes open and spoon strawberries over bottom half. Top with top half of shortcake and spoon betties over all. Top with whipped cream.

* If you had rather make the shortcakes from scratch:

2 cups sifted self-rising flour

¼ cup shortening

2/3 cup milk or buttermilk (buttermilk gives the best flavor and lends to helping shortcakes brown).

Preheat oven to 475 degrees.

Sift flour. Cut in the shortening. Add milk and mix until combined. Knead the dough lightly 10 times. (Do not over knead, as this will make the dough tough). Place dough on floured cutting board. Pat (do not roll) out to about ½-in thick. Cut out with biscuit or cookie cuter. Place shortcakes on greased cookie sheet. Bake 12 to 15 minutes or until golden brown.

You could use any fruit you want. Just substitute peaches, blueberries, raspberries or even blackberries in place of the strawberries.

This next one is a bit harder:

Mississippi Mud Cake

Preheat oven to 300 degrees.

Cake:

1 cup shortening

2 cups sugar

1 ½ cups plain flour

4 eggs

¼ tsp. salt

1/3 cup cocoa

1 cup pecans, chopped

1 pkg. mini marshmallows

Icing:

1 box confectioner’s sugar

1 stick margarine

1/3 cup cocoa

½ cup pecans, chopped

½ cup milk

Combine all cake ingredients, except marshmallows. Pour in greased 13x9x2″ baking pan. Bake at 300 degrees for 30 minutes. While cake is still hot, sprinkle marshmallows on top of cake.

Icing:

Melt margarine. Add rest of ingredients and mix well. Spread over cake. Let cake sit for at least two hours before cutting.

These are just a couple of ideas. Plan a nice menu and top off with one of these ideas. It’s sure to be a hit.
