I decided to experiment with using hummus as the base of a sauce for a pasta recipe. My husband and I were pleased with the results. It is a simple and tasty recipe. The meal is healthy and easy to make.
Ingredients
Tub of Hummus (I used the roasted red pepper flavor)
Ground Turkey or Cut Up Chicken Tenders
8 Ounces Pasta
Favorite vegetables (I have used carrots and zucchini and also broccoli)
Cayenne
Onion Powder
Garlic Powder
Salt
Preparation
The first thing I do is cut up my vegetables. When I use carrots, I steam them before adding to the main dish.
Next I cook the ground turkey or the chicken in a skillet and get the water boiling for the pasta.
Once the meat is cooked, I add the vegetables and cook for between 3 and 5 minutes on medium. This really depends on how soft you like the vegetables. While the vegetables are cooking I add all the seasonings and stir.
I try to time the pasta to go in about the time I add the vegetables or just a little before. The pasta I use takes about 10 minutes.
After cooking the vegetables with the meat for about 3-5 minutes, I add a whole container of hummus plus enough water to give it a thinner sauce like consistency. I lower the heat to between low and medium and cook for no more than 5 minutes.
Once the pasta is ready, I drain it and add it to the skillet. The meal is ready.
My husband isn’t a big fan of hummus, but cooking it this way does seem to change it up a bit. We thought it actually tasted a little bit like a Stroganoff. The meal can be varied depending on the flavor of hummus used, the meat, and vegetables. I love this quick and healthy pasta meal made with hummus.
