Don’t Mess with the Best Key Lime Pie

My husband loves Key Lime Pie. I will not tell a lie, I do too! I have been buying frozen key lime pies off and on and they are good in a pinch. A few weeks ago I decided to make my own key lime pie and the search was on for key lime juice. After looking in Wal-Mart, Food Lion, Cooks and Publix without success, I was ready to give up. That is until yesterday morning. I decided to give By-Lo a try. I was not a fan of that store previously, but now I am!

The search was over. I found what I was looking for; the product I had used a few years ago called Nellie and Joe’s Famous Key West Lime Juice. It comes in a 16 ounce bright yellow bottle. The price at Bi-Lo was $2.89.

The instructions are fast and easy and the pie is delicious, so don’t mess with the best key lime pie!

You need:

a medium size bowl

3 egg yolks (no whites)

1 14 ounce can of sweetened evaporated milk

½:

* set the oven for 350 degrees

* put the three egg yokes in the bowl and beat them with a fork

* add the condensed milk and lime juice

* blend the mixture until smooth – it will thicken as you blend it

* pour into the pie crust

* bake for 15 minutes

* cool 10 minutes on a rack – then refrigerate for several hours before serving. The colder it is, the better it tastes.

Serve with whipped cream, store bought or make your own. Decorate the top with thin slices of fresh lime or grate some lime zest on it. It is very rich, so you don’t need a large slice. My husband put in his order for the next one already!

For this pie, instead of using the graham cracker crust normally associated with key lime pie, I used a chocolate cookie pre-made crust. That was a mistake; the crust had absolutely no flavor and added nothing to the overall taste. For the next pie I will go back to the pre-made graham cracker crust.

Now get busy, buy a bottle of Nellie and Joe’s Famous Key West Lime Juice and don’t mess with the best key lime pie!
