Deadheaddave’s Fried Collard Greens

I lived in the south for about 14 years and I got hooked on Fried Collard Greens. Later in my life I returned to my home area of New England where I found Collards were just as easy to grow in New England as they were in the south. I could grow collards on the concrete in winter in New England. Collards are so easy to grow I don’t understand why they are not more popular in New England.

Here is an easy recipe for making fried collard greens:

Ingredients:

  1. 2-3 slices of diced bacon
  2. 1 medium size diced onion
  3. 3-4 diced garlic cloves
  4. 12 large Collard Green leaves.

In a large frying pan, fry the bacon and onion. While the bacon and onion are frying, it is a good time to clean and de-vane the collard greens (to de-vane is to cut the thick part of the leave out).

Add the diced garlic clove to the bacon and onion.

When the bacon is almost brown, it is time to add the collards. With some poultry scissors, cut the collard greens into 1″ pieces and add to the frying mixture. The collard greens will begin to soften. Fry the mixture until the collard greens begin to burn slightly.

Best if served hot, but can be reheated.
